Fortiss LLC / Parkwest Casinos is in search of a Sushi Culinary Specialist who embodies creativity, meticulousness, and a strong commitment to delivering outstanding customer experiences.
The Sushi Culinary Specialist will be tasked with the preparation and presentation of premium sushi and sashimi offerings for our patrons.
Key Responsibilities:
Skillfully create sushi rolls, nigiri, sashimi, and other sushi delicacies following established recipes and quality standards.
Fish Preparation and Handling:
Expertly fillet and portion various fish and seafood types with accuracy and consistency.
Ensure all ingredients utilized in sushi crafting are fresh, appropriately stored, and adhere to the highest quality benchmarks.
Assist in maintaining sufficient inventory levels of ingredients, tools, and equipment essential for sushi preparation.
Exhibit exceptional attention to detail when arranging and presenting sushi dishes to ensure an appealing dining experience.
Comply with all food safety and sanitation protocols, maintaining a tidy and organized workspace.
Collaborate effectively with fellow kitchen personnel to guarantee seamless operations and prompt service during peak times.
Stay informed about industry trends and advancements in sushi preparation techniques, pursuing personal and professional development.
Availability to work any shift, including overtime as needed.
Regular attendance and punctuality are crucial for this role.
Ability to function as part of a team in a fast-paced environment.
Communicate effectively with colleagues, reporting incidents, hazards, and issues to supervisors and management.
Perform additional duties as assigned.
Qualifications:
A minimum of 2-3 years of experience as a Sushi Culinary Specialist in a professional kitchen setting, with an apprenticeship from a culinary institution; a combination of education and experience is also acceptable.
Extensive knowledge and proficiency in filleting and preparing various fish and seafood, ensuring the highest quality standards are met.
Strong knife skills and the capability to handle and prepare ingredients with precision and efficiency.
This position requires a valid CALIFORNIA FOOD HANDLERS Certification and/or Card.
Open availability to work SWING shifts, weekends, and holidays.
Must be at least 21 years old.
Must be able to obtain and maintain a current California gambling establishment employee permit, badge, or license.
Must provide proof of employment eligibility in the U.S.
Must successfully pass a mandatory drug test, criminal background check, and credit evaluation.
