• Maintain an up-to-date training program for all roles, ensuring that preparation and service recipes are accessible for team training.
• Provide regular performance feedback to the Chef de Cuisine regarding team members.
• Be accountable for cross-training culinary staff on all kitchen operations.
• Support the Chef de Cuisine and management team in all café priorities.
• Ensure complete compliance with all menu updates and procedural modifications.
• Lead by example, setting the standard for excellence every shift.
• Assist the Chef de Cuisine in executing a daily features program within the framework of the *Sterling Food Philosophy*.
• Maintain a guest-centric environment at all times.
• Adhere to *Dress for Success* protocols before and after each shift.
• Ensure that cooking times are communicated effectively to the team.
• Conduct ongoing educational sessions on food specifications and standards for both front and back of house during pre-shift meetings.
• Assist with weekly inventory management.
• Collaborate with the Chef de Cuisine to review vendor pricing and ensure accuracy.
• Ensure all orders are received according to standards, establishing par levels while delivering exceptional service.
• Contribute to the improvement of year-over-year performance metrics at the café.
• Serve as the primary contact for back-of-house maintenance, maintaining an equipment repair log.
• Keep the kitchen clean and well-organized.
• Ensure the walk-in cooler is cleaned and organized daily.
• Inspect food deliveries visually, using only the freshest ingredients in menu item preparation.
• Monitor proper receiving, storage (including temperature settings), and rotation of food products to comply with health regulations, including coverage, labeling, dating, and proper container usage.
• Properly rotate food products to minimize spoilage and waste.
• Uphold industry-leading safety and sanitation standards for the café.
• Ensure compliance with local and federal health codes, achieving a top health inspection rating.
• Complete daily line checks.
• Address any issues proactively and effectively.
• Ensure that all necessary utensils are utilized daily.
• Assist in ongoing education regarding food specifications and standards for both front and back of house through thoughtful pre-shift meetings.
• Help procure products from Sterling's approved vendors according to specifications.
• Aid in educating and developing the team on proper sanitation practices.
• Collaborate closely with the Chef de Cuisine and health department to maintain proactive sanitation measures.
• Play an active role in training management and hourly team members on kitchen safety.
• In dedicated training cafés, assist in teaching and training Management in Training (MIT) about kitchen operations.
• Execute daily and monthly equipment cleaning schedules.
• Conduct weekly repair and maintenance walkthroughs with the General Manager as directed.
