Job Overview

The Kitchen Sanitation Specialist is responsible for ensuring the cleanliness and hygiene of culinary spaces, service items, preparation tools, and waste disposal, while promoting a safe and efficient operational environment.

Primary Duties:

  • Ensure the cleanliness of kitchen areas and related facilities, including but not limited to: dishwashing areas, service area floors, loading docks, walls, carts, trash receptacles, dishwashing machines, and waste compactors.
  • Clean dishes, pots, pans, utensils, and all items necessary for restaurant operations. Organize and store sanitized service items appropriately while returning unsatisfactory items for re-cleaning.
  • Possess knowledge regarding the maintenance and care of culinary facilities, equipment, supplies, and materials.
  • Be prepared to manage a fast-paced environment with multiple tasks under time constraints, handling high business volumes efficiently.
  • Wear appropriate attire, gloves, and/or uniforms as required.
  • Assess situations and data to make informed decisions regarding equipment usage.
  • Communicate effectively with management, chefs, and service staff to address any issues or needs presented by guests or fellow employees.
  • Understand and adhere to safety protocols.
  • Follow routine verbal and written instructions accurately.
  • Meet departmental productivity standards consistently.
  • Collaborate as a team player, working towards collective goals and fostering a positive work atmosphere; assist colleagues, treat all with respect, and maintain openness to feedback and improvement.
  • Maintain a courteous, positive, and professional relationship with all personnel and the public.
  • Work effectively under pressure; maintain regular attendance, including during weekends and holidays.
  • Perform additional tasks and responsibilities as assigned.
