Fish Butcher Job Description

Pêche Seafood Grill is seeking a skilled Fish Butcher to join our BOH team. As a Fish Butcher, you will be responsible for fabricating, processing, and portioning whole fish, as well as receiving and storing seafood according to our standards.

Key Responsibilities:
  • Fabricate, process, and portion whole fish to meet our menu requirements.
  • Receive and store seafood in a clean and organized manner, adhering to our seafood storage practices.
  • Set up and work line stations at the required level, ensuring efficient execution of kitchen tasks.
  • Complete daily station mise en place in a timely and efficient fashion, maintaining a clean and organized station.
  • Consistently execute menu items while following our current restaurant recipes, ensuring high-quality dishes.
  • Work professionally with fellow BOH employees, maintaining a positive and respectful team environment.
  • Operate, clean, and maintain all kitchen equipment, adhering to our kitchen safety practices.
  • Assist in weekly deep cleaning of the BOH, ensuring a clean and safe working environment.
  • Taste all food at any required moment before and during service, ensuring quality control.
  • Follow all proper food safety practices and kitchen safety practices, maintaining a clean and organized kitchen.
Requirements:
  • Minimum of one year of kitchen experience preferred but not required.
  • Basic knife skills and knowledge of sanitation and food safety practices.
  • Passionate about food and hospitality, with a commitment to delivering exceptional customer experiences.
Physical Demands:
  • The physical demands for this position include seeing, hearing, speaking, reaching, frequently lifting to 50 pounds, sitting, standing, for 4 to 8 hours, bending, and moving intermittently during working hours.
