About the Role

We are seeking a highly skilled and experienced Executive Sous Chef to join our team at AEG. As a key member of our culinary team, you will be responsible for assisting in the oversight of food production and presentation in designated areas, with a strong focus on events executed throughout our locations.

Key Responsibilities
  • Leadership and Training: Assist with training and development of culinary team members through leading, motivating, delegating, counseling, and disciplining.
  • Food Quality and Presentation: Maintain a high standard of food quality and presentation for all locations and production areas, anticipating and resolving guest and employee needs.
  • Inventory Management: Order, requisition, and maintain inventory control of food products as needed.
  • Menu Development: Assist with menu development, creation, and utilization of standardized recipes, as well as nutrition analysis for all designated locations.
  • Kitchen Safety and Sanitation: Ensure proper use of kitchen equipment by maintaining kitchen safety and sanitation standards from the Department of Agriculture, monitoring and keeping equipment in good working order.
  • Meetings and Communication: Attend designated department and company meetings, performing other duties as assigned by Executive Sous Chef and Executive Chef.
Requirements
  • Experience: Minimum of 3 years of related experience, with a minimum of 1 year supervisory experience.
  • Education: Completion of high school or GED, Associate's degree in Culinary Arts preferred.
  • Certifications: Pre-Employment - ServSafe Certification and ServSafe Allergen Certificate preferred, Current ACF Certification preferred (Certified Culinarian or above).
  • Skills: Strong knowledge and experience in upscale casual or club dining restaurants and concession operations, previous experience in Stadium, Arena, and Theme Park Food and Beverage operations preferred.
Working Conditions

The position is subject to noise, extreme heat, and extreme cold. Schedule will vary according to operating needs, but will include days, evenings, weekends, and holidays.
