Responsibilities

Under the guidance of the Executive Sous Chef, you will oversee the staff and daily operations of the kitchen. Your role is crucial in maintaining a vibrant, safe, and efficient environment where the delivery of high-quality food and service is paramount.

Essential Job Functions:

  • Adhere to all Gaming Commission Regulations and departmental policies.
  • Supervise a section of the kitchen to ensure smooth operations.
  • Manage food requisitions according to menu requirements.
  • Address and report incidents promptly and accurately.
  • Train and mentor junior staff to enhance kitchen operations.
  • Utilize proper techniques and recipes for food preparation and cooking.
  • Apply culinary expertise to create meals that meet quality and presentation standards.
  • Monitor food costs and maintain them within company parameters.
  • Ensure high hygiene standards are upheld in the kitchen.
  • Stay compliant with HACCP standards.
  • Deliver fast, friendly, and focused service.
  • Maintain accurate HACCP documentation and procedures.
  • Support the development of team members through training and coaching.
  • Commit to responsible gaming and alcohol service practices.
  • Conduct personal behavior that aligns with the company's mission and values.
  • Act as a mentor for team members in the Tribal Career Development program.
  • Report any illegal acts or ethics violations to management.
  • Ensure optimal staffing levels to manage labor costs effectively.
  • Stay informed about current trends in the culinary field.
  • Comply with all internal policies and procedures.
  • Perform other duties as assigned.

Qualifications

A culinary degree is required, along with a minimum of four (4) years of culinary experience and two (2) years of supervisory experience in a kitchen setting, or an equivalent combination of education and experience. Training in various culinary disciplines is essential.

Work Environment:

  • Exposure to casino-related environmental factors, including secondhand smoke and noise.
  • Frequent standing, walking, and lifting of up to 50 pounds.
  • Fast-paced and often crowded work environment.

Closing:
