Job Title: Fish Cutter Associate

Marukai Corp. is seeking a skilled Fish Cutter to join our team in the central kitchen. As a Fish Cutter, you will be responsible for expertly breaking down a variety of fish, including tuna, salmon, yellowtail, and more, to meet our high standards for quality and precision.

Key Responsibilities:
  • Keep the store clean and neat, adhering to our high standards of cleanliness and organization.
  • Provide friendly and helpful service to colleagues in the workplace.
  • Properly wear and use company-provided Personal Protective Equipment, including uniform, vest, apron, mask, gloves, hat, and hair net.
  • Understand task requirements and ensure all necessary materials and equipment are ready before starting work.
  • Meet quality and time standards for task completion.
  • Handle various products, including Deli, Meat, Seafood, Bakery, Sushi, and other perishable items, as assigned.
  • Operate different tools and equipment, such as slicer, scale, saw, knife, wrapper, grinder, and other necessary items for prep and cooking ingredients.
  • Work efficiently and effectively as part of a team, maintaining a fast pace and respecting teamwork.
  • Follow supervisor instructions and company policies and procedures.
  • Perform other assigned tasks as needed.
Requirements:
  • Previous experience in a central kitchen environment is a plus, but not required.
  • Demonstrate ability to work as part of a team.
  • Ability to work both fast and accurately.
  • Stand and walk for an entire shift, moving safely through all areas of the store, including stairs, uneven or slick surfaces.
  • Excellent time management and organizational skills, including ability to multi-task effectively.
  • Excellent property attitude and teamwork.
  • Highly detail-oriented.
  • Good written and verbal communication skills.
Certificates & Licenses:
  • California State Driver's License.
  • Possesses a food handling license.
  • Possesses a forklift operating license.
  • Must be accredited by the National Registry of Food Safety Professionals or similar accrediting organization as a 'Certified Food Safety Manager' or will be required to attend company-paid training and have the ability to achieve accreditation within the first 90 days of employment. Accreditation must be maintained while employed in a position in which it is required.
Work Environment:
  • Retail store area, including warehouse, cold storage, and kitchen (confined, noise, and temperature levels).
  • Indoor (artificial-variable lighting, air-conditioned, and potentially crowded).
  • Outdoor (parking area and/or travel between stores).
  • Noise Level (moderate, can be noisy during busy times).
