We are seeking a skilled Culinary Specialist to enhance our professional kitchen team at Zermatt Resort. If you have a passion for cooking and a wealth of experience, this position may be a perfect fit for you.
Key Responsibilities:
- Supervise various food preparation and intricate cooking tasks, while also mentoring team members in techniques such as cleaning and chopping produce, crafting soups and sauces, and portioning proteins.
- Develop innovative recipes and daily specials.
- Demonstrate proficiency across all kitchen stations, ensuring timely and consistent preparation of menu items that meet the standards set by the executive chef.
- Support the sous chef in their absence, maintaining cleanliness and adhering to food safety and quality protocols.
- Ensure adherence to recipes, proper preparation of ingredients, and the presentation of all dishes.
- Evaluate food quality in terms of taste, texture, and visual appeal.
- Optimize food production methods for efficiency in cost and time, offering suggestions for enhancing kitchen operations.
- Exhibit a strong desire for knowledge through inquiry, self-study, and culinary experimentation.
- Perform additional tasks as assigned.
Qualifications:
- This full-time role requires a flexible schedule, including availability for evenings, weekends, and holidays.
- Preferred candidates will have formal training from a culinary arts institution or 3-5 years of relevant cooking experience, or a combination of education and experience that provides comparable skills.
- Experience in a high-volume restaurant and banquet kitchen is essential.
- Ability to lift and carry objects weighing up to 25 pounds independently.
- Demonstrated efficiency and knowledge of food safety practices are required.
- Frequent standing, bending, and walking for extended periods is necessary.
- Food Safety manager certification is preferred; food handler certification is mandatory.
- A comprehensive understanding of culinary techniques and kitchen operations is essential, along with the ability to instruct others.
- Strong administrative, mathematical, and supervisory skills are advantageous, with prior experience in inventory control, ordering, and menu planning being a plus.
- Manage guest orders with professionalism and efficiency.
- Possess a solid grasp of culinary mathematics and recipe adjustments.
- Thorough knowledge of food allergies and dietary restrictions, with the ability to modify menu items accordingly.
