The Culinary Specialist, under the guidance of the Head Chef, Restaurant Supervisor, or Food and Beverage Director, is tasked with the preparation and cooking of a variety of food items, including soups, sauces, main courses, pastas, and vegetables, ensuring timely service based on the demands of the business. This role also involves assisting in the preparation and cooking for special events, employee meals, and other unique occasions, including maintaining the buffet and ensuring its cleanliness. The Culinary Specialist is dedicated to providing attentive, friendly, and professional service to all guests, both internal and external, with the aim of consistently exceeding their expectations.

KEY RESPONSIBILITIES: (includes, but is not limited to, the following)

  • Ensures consistent and appealing presentation of food through portion control, fresh garnishes, and strict adherence to recipe guidelines.
  • Collaborates with the Head Chef or Food and Beverage Manager on the daily preparation list and all necessary prep work for the day and the following day.
  • Maintains a clean and organized workstation for the next shift.
  • Prepares various food items, such as sauces and garnishes, and performs tasks like cutting fruits.
  • Monitors food temperatures hourly and logs the information at the end of the shift.
  • Works closely with fellow kitchen staff to communicate when food items are low on the buffet.
  • Prepares, refills, and maintains the buffet area in a neat and orderly manner.
  • Carves a selection of roasted meats for the buffet each evening.
  • Ensures the buffet remains clean and that food is fresh.
  • Monitors food temperatures and alerts management of any issues.
  • Exhibits safety, security, and hospitality at all times.
  • Checks all backup food items for freshness and quality.
  • Monitors temperature and moisture levels of all food holding equipment in use.
  • Regularly updates the Head Chef, Restaurant Supervisor, or Food and Beverage Director on the status of assigned prep tasks.
  • Labels, dates, and stores all food products in a sanitary and efficient manner.
  • Maintains a high standard of cleanliness and sanitation in the kitchen and workstation throughout the shift.
ADDITIONAL DUTIES: (includes, but is not limited to, the following)
  • Adheres to safe food handling practices while following recipe standards.
  • Operates a point of sale system (POS) as required.
  • Rotates food products in storage areas and workstations.
  • Participates in all mandatory training sessions and meetings.
  • Performs other job-related duties as assigned.
CONTACTS:

Works closely with immediate colleagues, other department staff, supervisors/managers, customers, and external vendors/service providers.

PHYSICAL DEMANDS:

This position requires heavy lifting, with the ability to lift up to 100 pounds with assistance and frequently carry up to 50 pounds. Physical activities include constant standing, walking, pushing/pulling, and using various senses. The role may involve occasional sitting, climbing, kneeling, and crawling. Working conditions include exposure to noise, temperature extremes, and varying lighting conditions. Potential hazards include exposure to moving machinery, electrical equipment, chemicals, and other workplace risks.

QUALIFICATIONS:

Education: High School diploma or equivalent preferred.

Experience: Previous experience in food and beverage preparation in a high-volume setting is required. Experience in large-scale cooking is preferred.

Certification/License: N/A

Knowledge, Skills, and Abilities: Basic math skills are necessary. Effective communication skills, both verbal and written, are essential. A sanitation certificate is required within six months of hire, with training provided. Must be able to establish and maintain effective working relationships with supervisors, coworkers, and the public. A neat appearance, friendliness, and a positive attitude are important. Flexibility to work various shifts, including nights, weekends, and holidays, is required. Must be able to work extended hours when necessary.
