Job Purpose

The Custodian role is essential in delivering an exceptional experience to our patrons from the moment they enter the establishment. By elevating food preparation standards, we ensure that our guests enjoy a memorable culinary journey. This position supports the daily operations of the restaurant, focusing on cleanliness and maintenance while assisting in food preparation, thereby guaranteeing that dining areas are presented according to our company's high standards. The Custodian embodies the philosophy that Every Guest Matters, collaborating with a diverse array of guests and team members.

Essential Functions

Responsibilities include, but are not limited to:

  • Maintaining a tidy and organized workspace
  • Ensuring tables are cleared and sanitized after guests depart
  • Washing dishes and other kitchenware in accordance with company standards
  • Restocking supplies as needed
  • Receiving and storing food inventory
  • Disposing of trash and cleaning waste containers
  • Preparing and marinating food items as per standard recipes within designated timeframes
  • Accurately measuring and assembling ingredients for recipes
  • Cutting and portioning food products to meet company specifications
  • Utilizing scales to ensure proper food portioning
  • Minimizing product waste
  • Assessing ingredients for quality and quantity
  • Cleaning and organizing refrigeration units and storage areas
  • Washing and cutting raw food items
  • Refilling condiments and maintaining beverage stations
  • Ensuring restrooms are clean and well-stocked
  • Cleaning windows, doors, and sneeze guards
  • Refilling soap and sanitizer dispensers and stocking towels

Custodian Accountability

Adheres to all food safety standards, including handwashing and temperature control, while ensuring that produce is prepared according to company guidelines. Promptly notifies management of any guest or team member injuries or complaints. Rotates products following the First In, First Out method to maintain freshness. Logs and discards any products that exceed their use-by dates. Communicates effectively with team members and management regarding order statuses and product availability. Participates in administrative tasks, which may include ordering and detailed cleaning.

Working Conditions

This position operates in a fast-paced environment with potential exposure to smoke, steam, and varying temperatures. The ability to work effectively under pressure and respond quickly to changing demands is essential.

Physical Requirements

Mobility is required throughout the shift, including prolonged standing. The role necessitates the ability to reach, bend, squat, and frequently lift and move items weighing up to 50 lbs. Proficiency in using knives and food preparation equipment is required. The candidate must maintain a constant state of alertness and safety.

Travel & Relocation

Travel is not required, except for meetings or training within the local area. Temporary or permanent relocation to other company locations may be necessary, but overnight stays are not expected.

Supervisor Responsibility

This position does not entail supervisory responsibilities.
