Job Overview

The Culinary Specialist plays a crucial role in ensuring the quality and freshness of all Hot Choice Buffet offerings. This position requires a focus on speed, cleanliness, and adherence to product specifications.

Key Responsibilities:
  • Food Preparation: Prepare Hot Choice Buffet items, including Carving and Display Cooking products, following established recipes and procedures.
  • Grill all menu items to meet quality standards.
  • Ensure that fried products are consistently fresh and served hot.
  • Assist in restocking items at the Display Cooking Station when necessary.
  • Support guests with carved meat options if the Carver is unavailable.
  • Utilize the buffet production system to maintain quality and compliance with shelf life standards.
Operational Standards:
  • Maintain appropriate cooking, holding, and serving temperatures for all products.
  • Use production guides to keep an accurate inventory of hot cook items.
  • Conduct opening and closing procedures as required.
  • Ensure equipment is properly maintained according to guidelines.
  • Restock and rotate food products using the first-in, first-out (FIFO) method.
  • Take inventory and verify product levels with management at the start and end of shifts.
Sanitation and Cleanliness:
  • Ensure the Hot Cook area and all utensils are clean and sanitized.
  • Follow a duty roster to meet cleanliness and service standards.
  • Adhere to local health department regulations.
  • Keep the Char Grill clean to maintain product quality and sanitation.
Customer Engagement:
  • Ensure that Hot Choice Buffet items, including Display Cooking products, are always served hot and fresh.
  • Understand and execute responsibilities related to timely product delivery.
  • Provide friendly and courteous service to guests, assisting them with their selections.
  • Maintain professional communication at all times.
