Meat Production Specialist

Golden Corral is currently seeking a skilled Meat Production Specialist to join our team. This role plays a crucial part in ensuring top-quality meat cutting and production, which directly impacts the guest's dining experience.

The Meat Production Specialist will be responsible for cutting meat according to product specifications and time standards, utilizing the buffet production system to maintain quality and shelf life compliance. They will also rotate cut and boxed meat to ensure freshness and stock the Meat Cooler in accordance with approved food safety guidelines.

• Cutting meat according to product specifications and time standards
• Maintaining quality and shelf life compliance using the buffet production system
• Rotating cut and boxed meat to ensure freshness
• Stocking and arranging the Meat Cooler according to approved food safety guidelines

• Sanitizing all surfaces between production of chicken and any other meat to prevent cross-contamination
• Recognizing spoiled meat by its stickiness, slickness, or unpleasant smell
• Cleaning and sanitizing the meat room according to cleanliness, service, and quality standards
• FOLLOWING LOCAL HEALTH DEPARTMENT LAWS

• Maintaining an inventory of all meat products using administration forms
• Notifying management of any discrepancies in product or equipment
• Performing opening and closing administrative procedures
• Properly maintaining equipment according to the Equipment Maintenance manual
• Completing duty roster tasks
