Position Summary:

We are on the lookout for a skilled Sushi Culinary Specialist and Kitchen Supervisor to become a vital part of our dynamic sushi establishment. The ideal candidate should possess exceptional knife skills, essential for crafting exquisite Sashimi and Nigiri dishes. Responsibilities will include supporting the Head Chef/Kitchen Manager in various kitchen operations such as food procurement, preparation, and upholding quality standards, sanitation, and cleanliness. Additionally, the role involves training staff in cooking techniques, food presentation, portion control, cost management, and all back-of-house operations.

Qualifications and Skills:

  • Exceptional knife skills are essential.
  • Demonstrated experience as a sushi chef, preferably in a supervisory capacity, with a minimum of 4 years.
  • Advanced knife skills with a flair for creating visually appealing presentations.
  • In-depth knowledge of sushi preparation and product.
  • Capability to lead a team and thrive in a fast-paced environment.
  • Outstanding organizational skills and meticulous attention to detail.
  • Strong communication and customer service abilities.
  • Physical stamina to stand for extended periods and lift up to 50 pounds.

Key Responsibilities:

  • Exemplify and uphold the mission of Sushi Lucy, ensuring the delivery of exceptional food, service, and ambiance.
  • Oversee Back of House staff, including recruitment, interviewing, and training.
  • Develop and manage work schedules for Back of House personnel.
  • Conduct regular kitchen inspections to ensure hygiene and sanitation standards are met.
  • Supervise food preparation, presentation, and storage to comply with health and safety regulations.
  • Monitor inventory levels and ensure adequate stock of Back of House supplies.
  • Assist in onboarding and continuous training of kitchen staff.
  • In the absence of the Front of House Supervisor, manage both Front and Back of House operations.
  • Maintain high-quality service and adhere to all Sushi Lucy standards.
  • Ensure strict adherence to all Sushi Lucy recipes.
  • Manage recipe costing and update pricing as necessary.
  • Ensure compliance with health codes and sanitation requirements.
  • Address customer complaints promptly and effectively.
  • Develop strategies to enhance the dining experience for customers.
  • Ensure all kitchen preparation steps are consistently followed as per training materials.
  • Collaborate with staff to anticipate future kitchen supply needs.
  • Maintain an inventory of necessary supplies.
  • Identify opportunities to reduce waste, lower costs, and enhance profitability.
