Key Responsibilities- Plan and implement regular and modified menus according to established guidelines and corporate programs.
- Ensure that all food preparation, presentation, and portioning meet standardized recipes and quality standards.
- Train and develop kitchen staff in food preparation, safe handling, and operation of equipment, food safety, and sanitation procedures.
- Establish and maintain cleaning and maintenance schedules for equipment, storage, and work areas.
- Manage inventory of food and non-food supplies to stay within established guidelines and ensure availability of necessary products.
- Make decisions regarding utilization of leftover food products, adhering to company guidelines.
- Comply with federal, state, and local health and sanitation regulations and department sanitation procedures.
- Participate in departmental meetings, staff development, and professional programs as appropriate.
- A.S. or equivalent experience in culinary arts or a related field.
- 5+ years of progressive culinary/kitchen management experience, depending on formal degree or training.
- Extensive catering experience and high-volume, complex foodservice operations experience are highly desirable.
- Hands-on chef experience and comprehensive knowledge of food and catering trends are essential.
- Must be experienced with computers, including Microsoft Office, Outlook, and the Internet.
- ServSafe certification is highly desirable.
