About the Role

We are seeking a highly skilled and experienced Garde Manger Chef de Partie to join our culinary team at Kalahari Resorts and Conventions. As a key member of our kitchen staff, you will be responsible for supporting the Chef in the preparation and presentation of cold foods, including salads, charcuterie, sandwiches, fruit, canapés, and basic sushi rolls.

Key Responsibilities
  • Assist in the preparation of cold foods according to established recipes and standards.
  • Visually inspect all food products to ensure they meet quality standards.
  • Assist in maintaining the cleanliness, sanitation, and safety of the kitchen and storage areas.
  • Minimize waste and maximize cost/production ratio.
  • Lead a team in bulk production of cold foods and present attractive plates and platters.
  • Properly stock and organize the walk-in refrigerator.
  • Ensure all food items are properly labeled and stored.
  • Monitor food temperatures and store food at safe temperatures.
Requirements
  • 1+ year experience in a high-volume production kitchen.
  • Ability to lead a team and work independently.
  • Strong organizational skills and attention to detail.
  • Ability to work in a fast-paced environment and meet deadlines.
