Lead Pastry Artisan

The Lead Pastry Artisan oversees the culinary operations by providing direction and management for the pastry team through the establishment of effective systems. This role ensures quality and portion consistency in all culinary outlets, including Banquets, Lookout Lodge, Family Barn, Bar Bistro, Martis Perk, and Beach Shack. The Lead Pastry Artisan facilitates food production and provides leadership for the culinary staff to ensure adherence to the standards set forth by the Executive Chef.
ESSENTIAL JOB RESPONSIBILITIES:
- Supervise the pastry team by following the standards and guidance of the Executive Chef.
- Manage daily product ordering and inventory control for all pastry items.
- Lead by example with hands-on execution.
- Oversee pastry production across all property outlets.
- Ensure that established culture and core standards are consistently met.
- Communicate with the Executive Chef to ensure successful coordination of product ordering, variances, spoilage, and excess inventories.
- Submit written ideas to the Executive Chef to continuously enhance production flow and other outputs.
- Assist in menu planning and development for the property, considering factors such as product availability, food and service costs, marketing conditions, and business volume.
- Ensure compliance with sanitation standards as mandated by Martis Camp and local, state, and federal regulations, including maintaining cleanliness and organization in the kitchen.
- Implement control systems that assure quality and portion consistency, develop proper purchasing specifications, monitor operating criteria, and foster an understanding of the importance of food preparation and quality.
- Engage with employees and managers to meet operational needs and cultivate a trusting environment where all opinions are valued.
- Inspire through leadership.
- Must be able to work a flexible schedule, including nights, weekends, and holidays.
- Ability to multitask in a fast-paced environment.
- Advanced knife skills.
- Proficient in advanced pastry techniques, including cake decoration.
- Ability to build and maintain positive relationships within the organization.
- Uphold high ethical and moral standards.
- Strong understanding of various culinary techniques.
- Experience contributing to high-volume food sales.
- Minimum of 3 years' experience as a Pastry Chef in a private club, resort, or hotel.
- Serve Safe Food Protection Managers Certification.
- Culinary Arts Degree from an ACF accredited baking and pastry arts program.
- Experience supervising a large culinary team.
- Ability to lift 50 lbs.
- Ability to stand/walk for up to 8 hours per shift.
- Must be able to frequently sit, stand, bend, push, pull, use hands to handle or feel; and talk or hear, stoop, kneel, crouch, crawl, work with sharp knives and other objects, and walk.
- While performing the duties of this job, the employee is regularly exposed to wet and/or humid conditions, moving mechanical parts, toxic or caustic chemicals, extreme cold, and extreme heat.
