Job Overview

The Culinary Services Supervisor oversees all facets of the Culinary Services Division within the organization, ensuring efficient operations in food preparation, staff management, and resource allocation. This role is crucial in maintaining the nutritional well-being of all residents.

Key Responsibilities
  • Procure all necessary supplies to ensure the department operates effectively while adhering to budget constraints.
  • Guarantee that all residents receive meals in accordance with physician directives.
  • Ensure adherence to menu plans and document any necessary substitutions.
  • Implement recommendations from the Consultant Dietitian/Regional Dietitian, as approved by the Administrator.
  • Take proactive measures to ensure all food served is prepared safely and meets high-quality standards.
  • Oversee proper storage of food and supplies, implementing strategies to prevent theft.
  • Regularly inspect equipment for safety and functionality.
  • Maintain overall sanitation standards within the department.
  • Stay informed about Local, State, and Federal regulations relevant to the department.
  • Manage department personnel, including recruitment, training, and disciplinary actions.
  • Develop work schedules that facilitate the smooth operation of all departmental functions, with any overtime requiring Administrator approval.
  • Engage with residents upon admission and periodically thereafter to assess food preferences and dietary needs, communicating this information to relevant departments.
  • Coordinate with the dietitian to gather necessary information, such as resident weight and dietary assessments, and provide updates as needed.
  • Maintain comprehensive dietary records, including resident preferences and care plans.
  • Follow up on the dietitian's recommendations to ensure compliance.
  • Establish and update departmental policies and procedures as necessary.
  • Participate in interdisciplinary meetings and training sessions as required.
  • Keep a record of employees who have completed food safety training.
  • Perform additional duties as assigned by the Administrator.
  • Refer to the Petersen Health Care Dietary Operations Manual for guidance.
Essential Qualifications
  • Must be of legal working age.
  • Ability to read and comprehend work assignments.
  • Effective communication skills in English with residents and colleagues.
  • Ability to interact tactfully with staff, residents, families, visitors, and regulatory personnel.
  • General knowledge of state and federal regulations pertaining to long-term care.
  • Willingness to work overtime as needed.
  • Flexibility to cover staff absences and minimize overtime.
  • High school diploma or GED required; relevant experience may substitute for education.
  • Completion of or willingness to enroll in the Dietary Managers Course.
  • Successful completion of a sanitation examination or willingness to take an approved course.
  • Certification as a Dietary Manager (CDM) is preferred.
  • Must possess current federally mandated vaccinations or valid exemption documentation.
