Position Overview: In this role, you will be responsible for training, managing, and collaborating with all kitchen personnel to prepare, cook, and present high-quality dishes in accordance with our established standards. You will assist in monitoring food, labor, and departmental expenses, and oversee all culinary operations in the absence of the Executive Chef, including various dining outlets and services.

Key Responsibilities:

  • Delegate specific tasks to all kitchen staff to ensure efficient kitchen operations.
  • Provide training and supervision to culinary team members on proper menu item preparation.
  • Manage culinary staff schedules to maintain appropriate coverage while controlling payroll costs.
  • Ensure compliance with Health Department regulations through proper ordering, receiving, storage, and rotation of food products.
  • Implement cost and quality control procedures.
  • Oversee daily safety and sanitation practices within the kitchen.
  • Maintain staffing schedules for vacations and absences.
  • Assist with equipment repairs and preventative maintenance initiatives.
  • Prepare all food items according to established recipe specifications.
  • Recommend improvements to methods and procedures to enhance guest and associate satisfaction.
  • Foster effective relationships among associates.
  • Uphold standards of conduct, appearance, and hygiene.
  • Participate in the hotel's Fire, Safety, Security, and Environmental plans.
  • Attend departmental and other assigned meetings.
  • Perform additional duties as required.
Qualifications:
  • High School Diploma or equivalent required; apprenticeship or relevant experience preferred.
  • 3-5 years of managerial experience in a high-volume culinary environment.
  • Additional language skills and basic computer proficiency are advantageous.
  • Comprehensive knowledge of food products, standard recipes, and preparation techniques.
  • Ability to communicate effectively in English, both verbally and in writing.
  • Manual dexterity for operating kitchen equipment.
  • Capacity to lift and move items weighing up to 200 lbs. regularly.
  • Understanding of food and labor cost controls.
  • CPR certification and/or First Aid training preferred; must obtain Serve Safe certification.
  • Ability to stand, walk, and perform essential functions for extended periods.
  • Skill in dealing with diverse internal and external customers with patience and diplomacy.
  • Ability to observe and respond to emergency situations and maintain quality standards.
