We are seeking a talented Sushi Chef to join our team at Career Group in Washington, DC. This is an exciting opportunity for a skilled Executive Sushi Chef to lead our Omakase experience and take it to the next level.

About the Role:

  • As an Omakase specialist, you will be responsible for preparing and serving high-quality sushi dishes with precision, using techniques such as knife skills, rice preparation, and fish cutting.
  • You will ensure all ingredients are prepared and presented at their peak freshness, sourcing and selecting premium seafood, meats, vegetables, and condiments.
  • Serving as the main point of contact for customers at the Omakase bar or dining area, you will explain each dish with knowledge and enthusiasm, creating a memorable dining experience by engaging with guests and ensuring satisfaction.
  • You will maintain the highest standards of food quality, safety, and hygiene in accordance with local health regulations, ensuring all dishes are meticulously plated, garnished, and presented.
  • Working closely with kitchen staff, Sous Chefs, and FOH staff, you will ensure smooth service and train junior chefs or kitchen assistants on Omakase preparation and techniques.
  • You will oversee the inventory of ingredients, ensuring fresh stock is always available, and ensure proper storage of seafood, meats, and other ingredients to preserve freshness and quality.

Requirements:

  • Proven experience as an Omakase Chef or similar role in high-end Japanese cuisine, particularly sushi and sashimi.
  • Expertise in Japanese culinary techniques, including sushi preparation, knife skills, and food presentation.
  • Experience working in a fine-dining, Michelin-starred environment.
  • Ability to work under pressure in a fast-paced environment while maintaining high standards of quality.
  • Excellent communication skills and the ability to interact with guests in an engaging and friendly manner.
  • Ability to work in a team and lead by example.
