Job Overview

Location: Kitchen

Position Summary: As a Culinary Specialist I, you will be responsible for planning, preparing, and executing high-quality service in all aspects of restaurant production. This includes, but is not limited to, all menu items provided by the kitchen. You will ensure that the display and presentation of all items meet the standards set by the sous chef. All mise en place must be completed to the satisfaction of your supervisor or sous chef.

Key Responsibilities:

  1. Follow established recipes and plating guides precisely.
  2. Maintain an organized and tidy workstation and equipment to meet the expectations of the Chef.
  3. Contribute positively to the work environment.

Reporting Structure:

You will report directly to the Sous Chef, Outlet Chef, or Executive Chef.

Key Relationships:

Internal: Kitchen staff, Stewarding Staff, Food and Beverage Service Staff, Storeroom, Catering, and Engineering.

External: Hotel Guests and visitors.

Qualifications:

Essential:

  1. High school diploma or equivalent vocational training certificate.
  2. A minimum of 3 years of experience in the culinary field.
  3. Effective communication skills in English with guests, co-workers, and management.
  4. Experience or knowledge in various culinary techniques including grill, sauté, garde manger, soups, pastry, and vegetable preparation.
  5. Basic mathematical skills for recipe adjustments.

Desirable:

  1. Culinary college degree.
  2. Food handling certificate.
  3. Sanitation Certificate.
  4. Ability to communicate in multiple languages.

Skills:

  1. Attention to detail, speed, and accuracy in job functions.
  2. Ability to prioritize, organize, and delegate tasks effectively.
  3. Strong problem-solving skills and good judgment under pressure.
  4. Capability to handle multiple tasks while maintaining professionalism.
  5. Team-oriented with a focus on contributing to team success.
  6. Knowledge of meat temperatures and butchering techniques.

Essential Job Functions:

  1. Maintain a clean and organized work environment.
  2. Follow recipes accurately and adjust as necessary.
  3. Demonstrate good knife skills and proper seasoning techniques.
  4. Adhere to all sanitation and health regulations.
  5. Efficiently set up and organize workstation.
  6. Rotate, label, and date all food items properly.
  7. Work effectively in a fast-paced environment.
  8. Assist the Sous Chef in maintaining product quality.
