The Culinary Supervisor plays a vital role in the culinary team at Wynn Las Vegas, reporting directly to the Executive Sous Chef. This position is designed to assist in the management of culinary operations, ensuring the highest standards of food quality and safety are maintained throughout the kitchen.
Key Responsibilities:
- Act as a relief manager across various kitchen stations, ensuring adherence to quality standards and operational concepts.
- Uphold consistent food quality standards in line with Wynn's expectations.
- Continuously monitor and enhance food quality to improve the overall guest experience.
- Ensure that all safety regulations and company policies are communicated and followed by all kitchen staff.
- Proactively identify and address any potential issues to maintain a safe working environment.
- Encourage team involvement in decision-making processes, fostering a sense of ownership and accountability.
- Identify and implement best practices to enhance operational efficiency and quality.
Team Leadership:
- Oversee the culinary relief team, including staffing, training, and scheduling, collaborating closely with room chefs to meet operational needs.
- Ensure compliance with company policies and procedures, while promoting integrity and accountability among team members.
- Guide the culinary team by clearly defining roles, responsibilities, and performance expectations.
- Embody and promote the core values of Wynn Resorts in all business dealings.
- Provide mentorship and coaching to staff, recognizing and rewarding exceptional performance.
- Foster a collaborative team environment that encourages learning and growth.
Qualifications:
- A minimum of 3 years of experience in culinary management or a similar role is required.
- Ability to obtain necessary certifications, including a valid health card and Food Manager Certification.
- Fluency in English, both written and verbal; proficiency in a second language is advantageous.
- A culinary degree is preferred but not mandatory.
- Demonstrated knife skills and comprehensive knowledge of kitchen operations are essential.
- Experience with diverse cuisines and cooking techniques is required.
- Ability to maintain high standards of quality, creativity, and efficiency under pressure.
- Strong organizational skills with the ability to prioritize tasks effectively.
- Creative approach to food presentation and menu development.
- Proficient in leading and directing kitchen staff.
- Team-oriented with a willingness to assist in all aspects of kitchen operations.
- Familiarity with union environments is a plus.
- Basic computer skills and proficiency in Microsoft Office are necessary.
- Flexibility to work various shifts as needed.
