Job Summary:

The Nutritional Services Manager is responsible for delivering direct nutrition services to patients. This role ensures that high-quality food service is provided in compliance with all relevant state and federal regulations, as well as facility policies and procedures, under the guidance of the Administrator, Dietitian, and/or Food Services Director.

Key Responsibilities:

To successfully fulfill this role, the individual must effectively perform the following essential functions:

• Collaborate with the facility's dietitian to implement recommended dietary changes, assist in the planning of regular and special diet menus as prescribed by physicians, and ensure food availability for preparation by kitchen staff.

• Order, prepare, and serve meals that are appealing and nutritious, adhering to portion control and therapeutic diet guidelines while following sanitary regulations.

• Inspect special diet trays for accuracy, portion control, and presentation, while evaluating the kitchen and dietary areas for cleanliness, safety, and supply management.

• Respond to dietary emergencies promptly; document observations, interventions, and outcomes as necessary.

• Communicate department policies and procedures to employees, patients, families, visitors, and regulatory agencies.

• Assist in developing methods to assess the quality and quantity of food served.

• Oversee the tray line process and assist as needed.

• Manage purchases for designated menus as required.

• Monitor meal service and provide guidance to kitchen staff as necessary.

• Participate in the patient feeding process and review menus prior to food preparation.

• Conduct meetings with dietary personnel to identify areas for improvement and enhance service quality.

• Ensure that food service operations meet the needs of patients effectively.

• Assist in developing corrective action plans for any dietary deficiencies identified during inspections.

• Ensure compliance with safety and sanitation standards.

• Provide instruction and support to cooks and dietary aides as needed.

• Participate in the orientation, training, and scheduling of staff as directed.

• Document relevant information in medical records as required.

• Complete production sheets for the following day and maintain necessary forms, reports, and evaluations to manage equipment and supplies.

• Perform other related duties as assigned.

Job Requirements:

• Maintain confidentiality and privacy of all patient information and organizational business.

• Adhere to established universal precautions and isolation protocols.

• Foster a positive atmosphere of warmth and interest in patients' personal and healthcare needs.

• Successfully complete all required training.

• Effectively manage multiple priorities.

• Exercise independent judgment and decision-making.

• Reliable transportation is required.

Required Qualifications:

• Education:

A high school diploma or equivalent is required. An associate's degree or higher in food service management or hospitality, with a focus on food service or restaurant management, from an accredited institution is preferred. A bachelor's degree in Dietetics is highly desirable.

• Experience:

A minimum of one (1) year of supervisory dietary experience, preferably in a healthcare setting, along with three (3) years of experience in a hospital, nursing care facility, or related medical environment.

• License/Certification(s):

Dietary Manager Certification is recommended; however, if not certified, the employee must provide evidence of successful completion of approved Certified Manager coursework or be enrolled in an approved Certified Manager's course within the probationary period.

Supervisory Responsibilities:

• Supervise dietary staff to achieve departmental objectives, set performance goals, and ensure compliance with company standards.

• Provide opportunities for personal growth, constructive feedback, and coaching.

• Organize workflow and ensure staff understand their responsibilities.

• Monitor employee productivity and provide guidance as needed.

• Maintain staffing levels through recruitment, orientation, and training of new employees.

• Occasionally seek managerial direction for extraordinary circumstances.

Working Conditions:

• Good hearing ability is required.

• Ability to lift up to 40 pounds.

• Duties may involve standing, walking, sitting, bending, reaching, kneeling, pushing, and pulling.

• Work is typically performed in a well-lit, temperature-controlled skilled nursing facility.

• Frequent exposure to above-average conversational noise.

• Position may require flexible hours, unscheduled overtime, or occasional weekend work.

• Travel may be necessary.
