Job Title: Lead Cook

We are seeking a highly skilled and experienced Lead Cook to join our team at RAMEN TATSU-YA PAYROLL LLC. As a key member of our kitchen staff, you will be responsible for overseeing daily kitchen operations, ensuring food quality, and leading the kitchen team.

Key Responsibilities:
  • Line Checks: Conduct thorough line checks to ensure all dishes meet our high standards and safety guidelines.
  • Opening and Closing Procedures: Manage the opening and closing procedures to ensure a smooth and efficient kitchen operation.
  • Taste Tests and Test Bowls: Conduct taste tests and prepare test bowls to ensure food quality and consistency.
  • Station Setup: Set up the main station to ensure readiness for service.
  • Oversee Kitchen Operations: Supervise daily kitchen operations to ensure efficiency and adherence to company standards.
  • Food Safety: Ensure all food is prepared according to safety and sanitation standards.
  • Staff Management and Training: Manage and train kitchen staff on proper cooking procedures, presentation, and safety practices.
  • Maintain Cleanliness: Ensure the kitchen and all kitchen equipment are maintained to high cleanliness standards.
  • Monitor Equipment: Regularly check kitchen equipment for any issues and ensure they are properly maintained.
  • Cross-Training: Be willing to cross-train and work in various kitchen positions as needed.
  • Lead by Example: Demonstrate a strong work ethic and professionalism, setting a positive example for the team.
  • Ordering and Inventory Management: Oversee ordering and manage inventory to ensure adequate stock levels and minimize waste.
  • Labor and Sales Reports: Review labor and sales reports to determine staffing needs and adjust labor for each shift accordingly.
Requirements:
  • Prior experience in a similar role is preferred but not required.
  • Ability to handle and clean dishes and kitchen equipment efficiently.
  • Knowledge of safety practices related to handling chemicals and maintaining cleanliness.
  • Strong organizational skills and attention to detail.
  • Ability to work effectively both independently and as part of a team.
  • Excellent communication skills and a positive attitude.
