Job Purpose

The Custodian role is essential in delivering an exceptional experience to our patrons from the moment they enter the establishment. By elevating food preparation standards, we aim to provide our guests with a memorable culinary journey. This position supports the daily operations of the restaurant, which includes maintaining cleanliness and assisting in food preparation, ensuring that dining areas meet our company's presentation standards. The Custodian embodies the philosophy that Every Guest Matters, working alongside a diverse clientele and team members.

Essential Functions

Responsibilities include, but are not limited to:

  1. Maintaining a tidy and organized workspace.
  2. Ensuring tables are cleared and sanitized after guests depart.
  3. Washing dishes and kitchenware in accordance with company standards.
  4. Restocking items as necessary.
  5. Receiving and storing food supplies efficiently.
  6. Disposing of trash and cleaning waste containers.
  7. Preparing and marinating food items to order, adhering to standard recipes and procedures within designated timeframes.
  8. Accurately measuring and assembling ingredients for standard recipes.
  9. Cutting and portioning food products to meet company specifications.
  10. Utilizing scales to ensure proper food item portioning.
  11. Minimizing product waste.
  12. Assessing the quality and quantity of ingredients for acceptance or rejection.
  13. Cleaning and organizing storage areas, including walk-in and reach-in refrigerators.
  14. Rinsing and cutting raw food products.
  15. Refilling condiments as needed.
  16. Keeping beverage stations clean and stocked.
  17. Maintaining cleanliness in restrooms.
  18. Ensuring windows, doors, and sneeze guards are sanitized.
  19. Refilling soap and sanitizer containers and stocking towels.

Custodian Accountability

Adheres to all food safety protocols, including hand washing and cross-contamination standards. Ensures that produce is prepared and portioned according to company guidelines. Reports any injuries or complaints from guests or team members to a manager immediately. Rotates products based on the First In, First Out method to maintain freshness. Logs and discards any products that exceed their use-by date. Communicates effectively with team members and management regarding order statuses and product availability. Participates in administrative tasks, which may include ordering and detailed cleaning.

  • Food Handler Certificate.
  • Knowledge of recipes and menus.

  • Ability to multitask.
  • Capability to follow directions.
  • Problem-solving skills.
  • Fluency in English and Spanish is a plus.
  • Willingness to adapt to a dynamic work environment.
  • Strong organizational and time management skills.
  • Ability to maintain composure in a fast-paced setting.

Working Conditions

This position operates in a high-energy environment with potential exposure to smoke, steam, and varying temperatures. The ability to work effectively under pressure and adapt to changing customer demands is essential.

Physical Requirements

Mobility is required throughout the shift, including prolonged standing. Candidates must be able to reach, bend, squat, and frequently lift and move items weighing up to 50 lbs. Proficiency in using knives and food preparation equipment is necessary. Must maintain a state of alertness and safety throughout the workday.

Travel & Relocation

Travel is not required, except for occasional meetings or training sessions. Relocation to other company locations may be necessary on a temporary or permanent basis, with no overnight stays required.

Supervisor Responsibility

This position does not include supervisory responsibilities.
