By merging knowledge in nutrition, food science, and culinary practices, the Specialist will develop and execute programs aimed at promoting health and wellness, offer nutritional guidance for campus dining options, provide counseling to individuals and groups, and create resources for nutrition education.

The ideal candidate thrives in a collaborative environment and is adept at managing multiple priorities in a dynamic setting. Proficiency in various software applications, along with a solid understanding of inventory management and recipe formulation, is essential.
Workplace Requirements:
This is an on-campus role, necessitating all responsibilities to be conducted in-person. The position requires the ability to lift and transport items weighing up to 50 pounds regularly, with physical demands including prolonged periods of standing or walking. Additional physical capabilities include bending, crouching, lifting, visual acuity, reaching, climbing, and maintaining balance. The work environment may involve exposure to temperature variations in walk-in refrigeration units. The schedule is variable and may include evenings, weekends, and holidays, with flexibility required for shift assignments.
This role is deemed essential during campus emergencies, requiring the incumbent to report to campus and deliver designated essential services under the guidance of the Crisis Management Team.
Compensation Range: $72,600+
Minimum Qualifications:
- Bachelor's degree from an accredited institution in dietetics, nutrition, food service management, clinical nutrition, public health nutrition, food science, or a closely related field.
- Current Registered Dietitian credential from the Commission on Dietetic Registration (CDR) or the Academy of Nutrition and Dietetics (AND).
- Maintains dietetic registration and continuing education as required by the Academy of Nutrition and Dietetics and applicable state regulations.
- A minimum of three years of professional experience in nutrition or a related field, with consideration for candidates possessing relevant food service experience.
Technical Skills:
- Advanced proficiency in computer applications, including menu management and office software.
- Knowledge of food safety regulations and best practices.
- Expertise in nutrition assessment, counseling, and educational methodologies.
- Familiarity with menu development, food service operations, and sustainability practices.
- Exceptional organizational abilities and attention to detail.
- Strong verbal and written communication skills.
- Outstanding customer service and interpersonal skills.
- Ability to prioritize tasks, take initiative, and manage projects effectively.
- Capacity to exercise sound judgment and make informed decisions independently.
- Registered Dietitian Nutritionist (RDN) designation.

- Five years of experience in a related field.
- Hands-on experience in a culinary arts environment.
- Willingness to obtain and maintain City of Houston food handlers and food manager certification.

Nutritional Counseling and Education:
Conduct individual and group counseling sessions for students, faculty, and staff. Develop and facilitate educational workshops and presentations on topics such as healthy eating, meal planning, and dietary needs. Provide evidence-based nutrition information to promote wellness and address specific health concerns.
Menu Development and Assessment:
Collaborate with dining services to create nutritious and varied menu options that align with the dietary preferences of the campus community. Evaluate menus for nutritional adequacy and suggest improvements as necessary, incorporating sustainability principles into menu planning.
Food Safety Oversight:
Ensure adherence to food safety protocols in campus dining facilities, maintaining compliance with local, state, and federal regulations. Develop and implement training programs for dining staff on proper food handling and sanitation practices. Conduct regular inspections to identify and rectify potential hazards.
Campus Wellness Initiatives:
Work with campus wellness committees to design programs that encourage healthy eating and active lifestyles. Participate in health fairs and outreach activities to promote nutrition-related services and resources available on campus. Collaborate with student organizations to integrate nutrition education into campus events.
Research and Evaluation:
Stay informed about current research and trends in nutrition and public health. Collect and analyze data related to campus dining habits and nutrition knowledge to guide program development and assessment. Contribute to scholarly publications and presentations on nutrition initiatives.
Collaboration with Campus Services:
Partner with student accessibility services and campus health services to facilitate meal plan accommodations for students with dietary restrictions.
Dining Engagement:
Provide personalized tours of dining facilities to students and families, highlighting options that cater to specific dietary needs.
Compliance with Regulations:
Adhere to HIPAA and FERPA guidelines throughout the nutrition counseling process.
