Job Summary:
The Food Service Director will be responsible for the planning and supervision of the entire food service department, ensuring compliance with all regulatory requirements and the standards of excellence set by the Company.
Reporting Relationships:
The Food Service Director reports directly to the Executive Director.
Responsibilities:
- Plans, develops, organizes, and implements the food service department, including hiring and firing staff in conjunction with the Executive Director.
- Meets regularly with the Executive Director and care staff to ensure compliance with residents' dietary requirements.
- Trains, staffs, and monitors/promotes independent programs for staff training.
- Coordinates the food services department with other departments.
- Orders and purchases food, supplies, and equipment as needed.
- Inventory, weighs, and checks all incoming deliveries of food and supplies.
- Directs the proper storage of food and supplies and maintains an orderly inventory.
- Develops, tests, and maintains a file of standard recipes.
- Ensures the delivery of meals to the dining room at appropriate times.
- Assists in food preparation and cleaning duties.
- Plans and assists with special events, including private dinners.
- Periodically conducts a resident response program to evaluate meals.
- Evaluates food consumption and determines/minimizes waste.
- Assists in the preparation of the annual food service budget and makes efforts to operate within those guidelines.
- Manages labor, raw food, and supplies costs to budgeted expectations.
- Maintains compliance with licensing, training, and all applicable Health standards.
- Maintains proper operation of all equipment and monitors safe-working conditions.
- Maintains high quality of customer service, food preparation, and facility cleanliness.
- Plans menus to meet applicable requirements and resident satisfaction.
- Recruits and trains associates: cooks, servers, dishwashers, and utility staff.
- Maintains a collaborative team environment with a focus on service excellence.
- Maintains high resident satisfaction.
- Creates and maintains a safe and supportive work and living environment.
- Maintains compliance with HallKeen Management and HallKeen Assisted Living policies and all applicable local, state, and federal laws and regulations.
- Reports on-the-job injuries to a supervisor before the end of the day on the day an injury occurs.
- Establishes and maintains constructive working relationships with coworkers, residents, families, and visitors.
- Promotes the community in a positive way.
- Trains department staff.
- Is available for on-call community emergency situations.
- Performs other duties as assigned.
Other:
- Candidate must be age 21 or over. High School graduate and successful completion of a reputable course in food service management preferred and a college degree in culinary arts/management.
- Certificate/License as required by federal/state/local law or associated agencies.
- Must complete the Food Service Sanitation Course sponsored by the National Education Foundation of the Restaurant Association.
Physical Demands
- Physically able to move at least 50 lbs. without assistance.
- Physically able to bend, reach, and work in small areas.
- Physically able to push and pull equipment and furnishings.
- Physically able to stand for long periods of time.
