Job Overview

The Inmate Kitchen Supervisor is responsible for overseeing inmates in the preparation and service of meals, ensuring compliance with established production plans. This role involves training inmates in food service techniques and coordinating tasks to enhance operational efficiency. Additionally, the supervisor is tasked with maintaining sanitation standards and ensuring personal safety by adhering to all relevant regulations.

Key Responsibilities

  • Maintain adherence to food preparation and production standards by reviewing and approving logs.
  • Supervise inmates during food preparation and tray assembly processes.
  • Ensure that meal service is timely and meets all operational guidelines.
  • Participate in meal preparation and serving activities.
  • Print and distribute recipes to kitchen staff.
  • Guide inmates in the use of recipes and proper cooking techniques.
  • Ensure that portion sizes and dietary restrictions are accurately followed.
  • Conduct daily population counts and collaborate with staff on findings.
  • Uphold security protocols and ensure that storage areas are secured at all times.
  • Ensure all kitchen tools and equipment are returned to their designated secure locations.
  • Establish work procedures and schedules for kitchen staff, ensuring compliance with assigned tasks.
  • Assist in inventory management, receiving, and storing food items, and requisition orders as necessary.
  • Participate in the preparation and assembly of meals, ensuring quality control.
  • Follow company standards for food handling and storage, adhering to HACCP guidelines.

Qualifications

  • Must be at least 18 years old.
  • Preferred minimum of one year of experience in food preparation or a related field.
  • Previous supervisory experience is advantageous.
  • Experience working with inmates is a plus.
  • Ability to motivate and supervise inmates and team members in a correctional environment.
  • Must obtain food safety certification.
  • Ability to work independently with minimal supervision.
  • Demonstrated good judgment and tact in decision-making.
  • Must adhere to basic safety protocols and policies.
  • Must qualify for and maintain security clearance within the correctional facility.

This position may involve physical demands such as lifting, bending, pushing, pulling, and extended periods of walking and standing. Uniforms and/or Personal Protective Equipment (PPE) may be required.

Education

High School Diploma or equivalent.
