Job Overview

The Correctional Food Service Supervisor oversees the kitchen operations within a correctional facility, ensuring that meals and food items are prepared according to established production standards. In this position, you will be responsible for training inmates in food preparation techniques and assigning tasks to enhance operational efficiency. Additionally, maintaining a clean and safe environment is crucial, as you will adhere to all relevant health and safety regulations.

Key Responsibilities

  • Maintain compliance with food preparation and production standards by reviewing and approving logs related to production and temperature.
  • Supervise inmates during food preparation and tray assembly processes.
  • Ensure timely and efficient meal service while adhering to all operational guidelines.
  • Participate in the preparation and serving of meals.
  • Print and distribute recipes to kitchen staff.
  • Guide inmates in the application of recipes and instruct on proper cooking methods.
  • Ensure that portion sizes and special dietary needs are accurately met.
  • Conduct daily population counts and review them with staff members.
  • Follow security protocols, ensuring that storage areas are secured at all times.
  • Ensure all kitchen tools and equipment are returned to their designated secure locations and that all keys are accounted for.
  • Establish work procedures, prepare schedules for work and sanitation, and ensure adherence to these schedules by cooks and inmates.
  • Assist in inventory management, receiving, and storing food items, and requisition orders as necessary.
  • Engage in the preparation and assembly of meals while adhering to company standards for food handling and storage.

Qualifications

  • Must be at least 18 years old.
  • Preferred experience of one year in food preparation or a related field.
  • Previous supervisory experience is a plus.
  • Experience working with inmates is advantageous.
  • Ability to motivate and supervise inmates and team members to achieve high-quality food production.
  • Must obtain food safety certification.
  • Ability to work independently with minimal supervision.
  • Demonstrated good judgment and tact in interactions.
  • Must adhere to basic safety procedures and policies.
  • Must qualify for and maintain security clearance within the correctional facility.

This role may involve physical demands, including lifting, bending, pushing, pulling, and extended periods of walking and standing. Uniforms and Personal Protective Equipment (PPE) may be required.

Education

High School Diploma or equivalent.
