Position Summary:

The primary responsibility of the Culinary Specialist role is to guarantee that meals for patients are prepared and portioned accurately according to approved menus in a timely manner. This role ensures that all food is prepared in a hygienic environment and complies with local, state, and federal regulations.

Qualifications:
  • Possession of a current state Food Manager Certificate.
  • Preferred experience in quality food preparation within long-term care or healthcare environments.
  • Ability to read, write, and communicate effectively in English.
Key Responsibilities:
  • Oversee or directly prepare food items as per scheduled menus.
  • Follow food production schedules to minimize waste.
  • Properly label, date, and store food items and leftovers immediately after use.
  • Maintain cleanliness of equipment, utensils, and all work and storage areas.
  • Prepare special meals and snacks as directed by the Nutrition Services Director/Chef.
  • Ensure that all snacks and supplements are correctly identified with patient details.
  • Identify and rectify safety hazards in food service areas.
  • Assist in managing inventory and notify the Nutrition Services Director of any shortages.
  • Adhere to established policies and standards for food preparation.
  • Record temperatures of food items and storage units as necessary.
  • May assist in training and supervising new Nutrition Services staff.
  • Guide and instruct staff on equipment maintenance in the absence of the Nutrition Services Director/Chef.
  • Ensure food is attractively prepared and served at the correct temperature.
  • Contribute to the standardization of recipes to meet menu requirements.
  • Maintain portion control for all served foods.
  • Assist in checking food supplies upon delivery from vendors.
  • Unpack and store food and supplies as they arrive.
  • Ensure organized storage of all food items across various storage types.
  • Prepare tray cards in the absence of the Nutrition Services Director/Chef.
  • Exhibit leadership qualities and serve as a role model.
  • Understand and comply with Patient Care Management Systems.
  • Ensure the safety of patients/residents.
  • Perform additional duties as assigned.
