Sushi Chef Job Description

Position Summary: As a Sushi Chef at RA Sushi, you will be responsible for preparing sauces and sushi items for our guests in accordance with the restaurant's food preparations and service guidelines. You will primarily work in front of guests while preparing foods at the sushi bar and ensuring a fun and inviting experience. You will monitor and ensure the portioning of foods prepared at the sushi bar and maintain the cleanliness and sanitation of the sushi bar area and equipment.

Essential Functions and Responsibilities:
  • Greet and welcome guests upon arrival to the sushi bar/lounge area.
  • Prepare a variety of meats, seafood, poultry, vegetables, and other food items for cooking using a variety of kitchen equipment.
  • Respond promptly and courteously to guest requests and provide guests with information about food.
  • Ensure guests are satisfied with food quality and service.
  • Perform shift opening and closing duties as assigned, including cleaning the neta cases, cutting boards, equipment, and floors.
  • Maintain knowledge of and comply with the Company's standards on food portioning, cooking methods, quality standards, kitchen recipes, safety and sanitation standards, policies, and procedures.
  • Maintain kitchen, cooking areas, sushi counters, kitchen equipment, refrigeration units, and food storage areas clean, sanitary, and organized.
  • Report any kitchen/sushi equipment or maintenance issues to the manager on duty and head sushi chef.
  • Adhere to the Company's guidelines on proper food presentation and garnishes for all dishes.
  • Properly handle ready-to-eat food that is served raw.
  • Handle, store, label, and rotate foods properly and in accordance with public health safety, state, and local laws.
  • Follow Ecosure Best Practices for food handling and storage.
  • Use knives, hand tools, utensils, and equipment to portion, cut, slice, julienne, whip, beat, maintain holding temperature, chill, freeze, or otherwise produce food for the dining room, sushi lounge, and bar.
  • Keep the Head Sushi Chef informed of inventories and immediately report any issues with defective products or equipment.
  • Present a clean and neat appearance and use a courteous manner with all guests.
  • Immediately notify the MOD when guests are not satisfied with their experience or if an accident occurs.
  • Adhere to Company guidelines on alcoholic beverage service.
  • Assist with the preparation of sushi items and sushi helpers as required.
  • Participate and join restaurant staff in ensuring guest special occasion celebrations are memorable.
  • Upon request or at the direction of the company, may be asked to photograph and/or be photographed with guests.
  • Perform other duties as assigned by a supervisor.
Job Requirements:
  • Must successfully pass the Company's sushi chef training program and cooking procedures.
  • Previous experience as a sushi chef is highly desirable.
  • Culinary degree is a plus.
  • Approved food handling training as required by local laws.
