The Lead Production Pastry Cook is a key member of the Milk Bar team, responsible for overseeing daily and weekly recipe production in the commissary. This role requires strong baking skills, previous pastry experience, and the ability to lead and train a team.
Key Responsibilities- Communicate effectively with the Production Manager and team members to ensure smooth production operations.
- Assist in supervising and developing staff, promoting a positive and productive work environment.
- Follow established procedures, recipes, and guides to ensure high-quality products and maintain operational efficiency.
- Meet production volume and schedule requirements while adhering to quality standards.
- Troubleshoot product issues and conduct shelf life testing as needed.
- Monitor product quality assurance through regular tastings and maintain a sanitary and organized work environment.
- Track product and assembly information, and monitor proper storage and shelf life guidelines.
- Complete knowledge of all processes in the production area and ability to train current and new staff.
- Knowledge and skill with various kitchen tools and equipment, including mixers, ovens, and other equipment.
- Able to work with a sense of urgency and purpose to achieve daily, weekly, and long-term goals.
- Other duties as assigned by the Production Manager, including closing/opening duties, emails, and setting up the team.
- Minimum 2 years of experience in baking and/or related pastry production.
- Understanding of proper pastry methods, techniques, and standards.
- Food protection certificate required; culinary degree preferred.
- Passionate about the food industry with a strong interest in high-quality products.
- Efficient time management skills with an attention to detail.
- Ability to lift up to 25 lbs. frequently and 50/75 lbs. occasionally.
- Open schedule a must; FULL TIME availability is a must.
- Ability to build relationships and embrace change.
