Description

Pamunkey Regional Jail is seeking an entry-level candidate to perform essential tasks in the management of Culinary Services within a correctional environment. This role reports directly to the Culinary Services Manager and does not involve supervisory responsibilities.

Key Responsibilities:
  • Oversee the preparation, cooking, and serving of meals for both staff and incarcerated individuals, including training inmate workers;
  • Maintain cleanliness and sanitation of the kitchen and equipment;
  • Adhere to and enforce sanitation and cleaning standards for kitchen operations;
  • Ensure timely food preparation that meets nutritional guidelines;
  • Comply with Department of Health Standards regarding food safety;
  • Ensure proper portioning of food according to established guidelines;
  • Supervise safe usage of kitchen equipment;
  • Engage in daily direct contact and supervision of inmates;
  • Secure the kitchen facility at the end of each shift;
  • Compile and maintain inventory of utensils;
  • Keep accurate records as mandated by regulatory agencies;
  • Manage proper storage and utilization of food supplies.

Qualifications:

Knowledge of FDA nutritional requirements and State Health Department regulations related to food service and special dietary needs is essential. Candidates should possess the ability to utilize recipes and estimate appropriate food quantities, communicate effectively, and read and comprehend documents such as menus and recipes.

Education and Experience:
Applicants must be at least eighteen (18) years old and possess a high school diploma or equivalent. A minimum of three years of food preparation experience is required, with preference given to candidates with prior experience in corrections or institutional food preparation. Experience in ordering, purchasing, inventory management, and receiving is also preferred. Sanitation Certification is a plus. A combination of education, experience, and training equivalent to these requirements may be considered.
