Position Overview:
The Culinary Services Manager oversees the foodservice operations at a designated location, providing leadership and support to ensure that standards for food quality, inventory management, food safety, and customer service are consistently met. This role requires adherence to facility menus and compliance with all relevant federal, state, and local regulations, in alignment with our established policies and procedures to guarantee exceptional dining services.
Key Responsibilities:
Reporting:
Maintain comprehensive records of income, expenditures, food supplies, personnel, and equipment in a format suitable for submission to HCSG and facility management.
Training:
Lead all training initiatives, quality control measures, and in-service education for staff to uphold HCSG standards. This includes regular kitchen inspections to evaluate work quality using Quality Control Indicators (QCIs) for documentation.
Be prepared to perform essential duties of dietary aides, cooks, and dishwashers to assist during staff shortages.
Communication:
Effectively relay all directives from client managers, building occupants, and administrators to HCSG personnel.
Safety:
Utilize appropriate protective gear in all tasks. Ensure the safe and proper mixing and application of cleaning solutions while following all safety protocols. Report any equipment or cleaning product needs or malfunctions to a supervisor promptly. Adhere to established safety and quality standards at all times.
Follow infection control and universal precautions policies to maintain a sanitary environment.
Punctuality:
Exhibit consistent attendance and punctuality. Complete assigned tasks according to the established schedule and respond promptly to paging systems.
Customer Experience:
Represent HCSG positively by following instructions and demonstrating courtesy and cooperation with supervisors, colleagues, and client staff.
Resident Experience:
Engage in positive and respectful interactions with residents, staff, and facility guests.
Qualifications:
Demonstrate a positive attitude and the ability to follow both oral and written instructions while performing routine tasks consistently.
After completing all necessary training, utilize leadership skills to fulfill responsibilities independently while ensuring safety for oneself and others.
A degree in food service management or hospitality, with coursework in food service or restaurant management from an accredited institution, is preferred. Specialized training in foodservice management and nutrition is mandatory.
Successful completion of an approved Conference of Food Protection (CFP) Food Protection Manager (FPM) course within the first two weeks of employment is required.
Participation in the Certified Dietary Manager (CDM) course or certification as mandated by state and county regulations is essential.
Achieve the eLuminate Food Service Manager (FSM) and Long-Term Care Food Service (LTC-FSM) certifications within the first two months of employment.
Two years of experience in large-scale food production/service, dining/nutrition, and personnel supervision is preferred.
Basic computer skills are necessary for maintaining records and completing reports, including web-based reporting.
Completion of an approved sanitation and safety course may be required.
Must be able to lift and carry up to 50 pounds, push or pull up to 50 pounds, and stand, sit, bend, and walk for extended periods.
Ability to perform routine, repetitive tasks continuously and work around food and cleaning products is essential.
Must reside within the service area.
