Job Summary:

The Pastry Sous Chef will serve as a key member of the pastry team, responsible for executing high-quality pastry production in a state-of-the-art facility. This role requires strong leadership and organizational skills, with the ability to motivate and manage a team of up to 20 employees.

Key Responsibilities:

  • Manage day-to-day operations, ensuring the team meets daily production requirements.
  • Maintain a high level of motivation and team spirit, promoting a positive work environment.
  • Communicate effectively with the pastry team regarding production needs, levels, and policies.
  • Be aware of new items to add to production sheets and train the team on new items.
  • Ensure efficient storage of perishable items to minimize waste.
  • Provide adequate training to the pastry staff to minimize injuries.
  • Inform the Pastry Executive Chef of maintenance needs.
  • Responsible for quality control of ingredients and finished products, providing solutions to issues.
  • Comply with food safety, health, and safety regulations.

Requirements:

  • Ability to lead and mentor a team.
  • Ability to work in a standing position for long periods (up to 8 hours).
  • Availability to work shifts of 7am or 6pm, weekends, and holidays.
  • Strong organizational and decision-making skills.
  • Ability to lift and carry up to 40lbs and push or pull up to 150lbs during the shift.
  • Ability to maintain regular, punctual attendance.

Experience and Education:

  • 5-10 years of experience in high-volume pastry production or similar environment.
  • French pastry experience strongly preferred.
  • Professional Pastry Degree (4 years or more) strongly preferred.
  • Knowledge and experience in all aspects of high-volume pastry production.
