Wildland Fire Camp Culinary Leader

Scofield Catering & Management Inc is seeking an experienced and skilled Wildland Fire Camp Culinary Leader to join our team. This role offers a unique opportunity to lead our kitchens at fire camps while adhering to Mobile Food Service Managers specifications and guidelines.

About the Role:

• This position requires a high degree of accuracy and attention to detail in maintaining and enhancing customer satisfaction.
• The successful candidate will be responsible for leading a kitchen team, ensuring all kitchens are set up properly, and enforcing compliance with Government Contract specifications.
• A strong understanding of government contracts, health and sanitation practices, and quality control is essential for this role.

Key Responsibilities:

1. Lead by example: supervise kitchen staff, ensure employees follow proper health and sanitation practices, and maintain kitchen cleanliness and organization.
2. Work closely with the MFSU Manager to coordinate employees, set schedules, and resolve kitchen employee issues.
3. Cook on the line to fulfill orders and collaborate with the Executive Chef (Owner, Bryan Scofield) to set menus prior to fire season.
4. Coordinate food inventory with the Inventory Manager and vendors.
5. Train new kitchen staff and report any kitchen equipment issues to the Executive Chef or MFSU Manager.

Requirements:

• Proven experience in food service leadership, with a high degree of accuracy and attention to detail.
• Able to work as part of a team, maintain a positive and professional approach with coworkers and customers, and be highly organized with the ability to follow a daily routine.
• Trustworthy, adaptable, and a problem solver with previous experience with government contracts preferred.

Certifications:

• ServeSafe: Food Manager Certification

Estimated Salary: $60,000 - $80,000 per year, depending on experience. Benefits: Competitive compensation package, including health insurance, retirement plan, and paid time off.
