Job Overview

Cumberland Corral, LLC dba Golden Corral is seeking a skilled Meat Cutter to join our team. As a key member of our food production team, you will play a critical role in ensuring the highest quality meat products for our guests.

The successful candidate will be responsible for cutting meat according to product specifications and time standards, utilizing the buffet production system to maintain quality and shelf life compliance, and rotating cut and boxed meat to ensure freshness.

Key Responsibilities
  • Cut meat to exact specifications and time standards to meet product quality and quantity requirements.
  • Implement and maintain the buffet production system to ensure quality and shelf life compliance.
  • Rotate cut and boxed meat to ensure optimal freshness and minimize waste.
  • Stock and arrange the Meat Cooler in accordance with approved food safety guidelines.
Requirements
  • Sanitize all surfaces between production of chicken and other meats to prevent cross-contamination.
  • Recognize and address any issues with meat quality, including stickiness, slickness, or off-odors.
  • Clean and sanitize the meat room according to cleanliness, service, and quality standards.
  • Follow local health department regulations and guidelines.
Operational Excellence
  • Utilize administration forms to maintain accurate inventory of meat products and determine production levels.
  • Notify management of any discrepancies in product or equipment.
  • Perform opening and closing administrative procedures.
  • Maintain equipment according to the Equipment Maintenance manual.
  • Complete duty roster tasks as assigned.
