Position Overview: At Great Wolf Lodge, the Nighttime Food and Beverage Operations Manager, under the supervision of the Director of Food and Beverage, is responsible for managing and overseeing all facets of the organization's food and beverage planning, presentation, and service. This role emphasizes special event planning and implementation, managing departmental expenses, and ensuring adherence to quality and safety standards.

Key Responsibilities:

  • Lead the department's operations in collaboration with the Director and in their absence.
  • Assist in the daily administration and planning of the Food and Beverage Department to achieve monthly KPI goals.
  • Contribute to operational objectives by providing insights and recommendations for strategic plans and reviews.
  • Participate in the recruitment, hiring, training, and development of team members, ensuring compliance with company policies.
  • Ensure team members complete required training courses and adhere to operational standards.

Guest Experience: Guide frontline staff in anticipating and addressing guest needs to ensure maximum satisfaction. Collaborate with F&B leadership to oversee the preparation, presentation, and timely delivery of all food and beverage items across the Lodge.

Compliance and Safety: Work with the Executive Chef and Purchasing Team to maintain proper organization of storage areas and compliance with health code requirements. Ensure all F&B areas consistently adhere to local and national food handling, cleanliness, and sanitation standards.

Operational Excellence: Monitor equipment functionality, perform preventative maintenance, and manage supply levels. Conduct regular inventory checks to maintain budgeted controllable costs.

Team Development: Conduct pre-shift meetings and service audits, supporting the Purchasing & Stewarding team in maintaining par levels of kitchen-related supplies. Ensure compliance with safety regulations and achieve minimum score goals for inspections.

Qualifications:

  • Minimum of 2-3 years of management experience in food and beverage.
  • Proficient in procurement and inventory control processes.
  • Flexible scheduling availability, including nights, weekends, and holidays.
  • Strong written and verbal communication skills.
  • Experience in P&L management and strong analytical skills.
  • Attention to detail and effective time management.
  • Familiarity with hospitality software and food safety regulations.
  • Bachelor's degree in hospitality, business, or a related field.
  • Manager-level certification in food safety and alcohol awareness.
