Job Summary

As a Cook with Texas Western Hospitality Group, you will be responsible for ensuring the front line is completely broken down at the end of the shift, ensuring all food is stored properly and that all equipment is cleaned and maintained up to all health standards and established hotel policies regarding kitchen cleanliness and sanitation. This includes setting up the front line effectively, ensuring all menu products are adequately stocked, and rotating food products to preserve quality and control waste following the first in and first out. Additionally, you will maintain an orderly, clean, safe and sanitary work station that meets health standards and established hotel policies regarding kitchen cleanliness and sanitation. You will also check AM and PM checklists to determine what kind and how much food to prepare, and ensure all food products are properly labeled and dated. Furthermore, you will cook or otherwise prepare food according to the recipe, cook foods in quantities according to menu and number of persons to be served, and inventory food, supplies and equipment weekly. You will also order kitchen supplies as needed, ensure all temp logs and waste logs are maintained daily, and direct personnel assisting in preparation and serving of meals. Other responsibilities include receiving, dating, and examining foodstuffs and supplies to ensure quality and quantity meet established standards and specifications, carrying pans, kettles, and trays of food to and from work stations, stove, and refrigerator, and properly storing foods in designated areas following wrapping, dating, and rotation procedures. You will also clean work areas, equipment, and utensils, advise supervisor of low inventory items, and assist in receiving items and tracking inventory as required. Finally, you will maintain sanitation and cleanliness standards in the kitchen area that meet or exceed the state and local Health Board inspection and franchise requirements, and respond quickly to guest requests in a friendly manner.
