Synopsis: Assist in overseeing the preparation of all food items, including those used for events, banquets, and programs. Collaborate in developing menus, purchasing specifications, and recipes. Provide guidance and supervision to kitchen staff while maintaining exceptional culinary standards and adhering to strict sanitation protocols.

Duties:

  • Ensure a safe and sanitary kitchen environment at all times
  • Maintain compliance with food labeling and temperature control regulations
  • Conduct regular inspections to monitor the quality of food preparation, presentation, and cleanliness of production areas, equipment, and employee appearance
  • Develop innovative recipes and portion specifications considering consumer preferences, nutritional needs, product specifications, ease of preparation, and budgetary constraints
  • Prepare dishes according to established procedures, focusing on plate presentation, special function menu planning, and designing new service areas
  • Regularly inspect kitchen equipment, report any issues to the Assistant General Manager, and ensure seamless operation within company standards
  • Supervise kitchen staff, participate in hiring and training processes, set food item prices, and apply basic knife skills
  • Maintain comprehensive menu knowledge and enhance food presentation
  • Effectively communicate with management and colleagues to facilitate smooth operations
  • Pursue additional responsibilities essential for team success
  • Calculate monthly meal counts and maintain overall kitchen cleanliness, equipment, and machinery
  • Accommodate café food orders, prepare requested items like cookies or pizzas upon request from the café

Customer Service:

  • Provide accommodating service to guests with special needs and requests
  • Address guest complaints regarding food by communicating with the dining manager
  • Respond promptly to guest inquiries and address concerns related to food
  • Collaborate with upper management to resolve any food-related issues

Additional Responsibilities:

  • Attend pre-conference meetings with meeting planners for menu reviews
  • Participate in weekly Operations Meetings
  • Perform other duties assigned by the Executive Chef
  • Work a flexible schedule based on business needs
