POSITION SUMMARY
The Culinary Specialist is responsible for preparing menu items in accordance with company policies, procedures, and performance standards. This role includes maintaining food costs and ensuring the kitchen is kept clean at all times. You will work to maximize guest satisfaction and uphold a quality work environment as directed by the Kitchen Manager or Manager on Duty.
KEY RESPONSIBILITIES
- Prepare menu items following established recipes and standards.
- Arrive at work well-groomed, in clean and appropriate uniform, and consistently practice good personal hygiene.
- Utilize, maintain, and clean all kitchen equipment, as well as preparation and storage areas.
- Stock and rotate products on the line to adhere to shelf life standards.
- Possess knowledge of recipes, menu items, and preparation procedures to ensure proper portioning, quality, cooking times, and performance standards.
- Implement FIFO (first in, first out) practices when preparing items.
- Ensure cleanliness of the kitchen, prep areas, coolers, and storage spaces.
- Follow safety protocols and policies regarding food handling, rotation, and storage.
- Conduct line sweeps throughout the shift to maintain organization.
- Understand OSHA requirements and health department standards.
- Communicate effectively with the Manager on Duty and team members regarding product/service deficiencies and safety concerns.
- Assist team members, including helping the dishwasher with washing and restocking dishes, pots, pans, and utensils.
PHYSICAL DEMANDS AND WORK ENVIRONMENT
- Extensive standing and walking for up to 8 hours.
- Ability to see at a distance (20 feet) and close range (12 inches), distinguish shapes, and utilize peripheral vision to avoid hazards.
- Clear communication skills are essential.
- Reach heights of approximately 6 feet and depths of 2-3 feet.
- High level of mobility and flexibility within the workspace.
- Ability to read, write, and perform basic arithmetic calculations.
- Capable of using fingers for writing, slicing, chopping, and operating equipment.
- Must be able to fit through openings 30 inches wide.
- Ability to lift up to 50 pounds.
- Exposure to dish and cleaning chemicals.
SUPERVISION
Receives direction and training from the Kitchen Manager or Manager on Duty regarding specific procedures and assignments.
SKILLS AND EXPERIENCE REQUIRED
Basic skills in sanitation, safety, and customer service can be acquired through in-house training.
