Job Summary

Gana-A'Yoo, Limited - Antarctic Program is seeking a highly skilled and experienced Lead Baker to join our team at McMurdo Station. As a key member of our culinary team, you will be responsible for overseeing the production of high-quality baked goods and pastries, ensuring a safe and clean work environment, and providing exceptional customer service.

Key Responsibilities
  • Lead a team of bakers in the production of bread, pastries, and other baked goods, ensuring high-quality products and efficient workflow.
  • Develop and implement standardized recipes and production procedures to ensure consistency and quality.
  • Monitor and maintain a clean and sanitary work environment, adhering to all health and safety regulations.
  • Collaborate with the Sous Chef and Food Service Supervisor to plan and execute menu items, ensuring timely delivery and high-quality presentation.
  • Train and mentor junior staff members to develop their skills and knowledge.
  • Conduct regular inventory and ordering of ingredients and supplies, ensuring adequate stock levels and minimizing waste.
  • Participate in quality control and assurance initiatives, identifying areas for improvement and implementing corrective actions.
  • Develop and maintain relationships with suppliers and vendors to ensure timely delivery and competitive pricing.
  • Perform other duties as required to support the smooth operation of the bakery and culinary team.
Requirements
  • High school education or equivalent required; degree in culinary arts or related field preferred.
  • Minimum two years of experience in a commercial bakery or related field, with a focus on high-volume production and quality control.
  • Valid ServSafe Food Handler certificate required; valid driver's license and U.S. Passport also required.
  • Ability to work in a fast-paced environment, with a focus on teamwork and customer satisfaction.
  • Strong communication and leadership skills, with the ability to train and mentor junior staff members.
  • Ability to lift up to 50 pounds and stand for long periods, with a focus on maintaining a safe and healthy work environment.
