Key Responsibilities- Food Preparation: Prepare and cook a variety of dishes according to Treasure Bay specifications, utilizing techniques such as frying, boiling, sautéing, steaming, braising, and boiling.
- Leadership: Assume leadership responsibilities in the absence of a senior cook, ensuring seamless kitchen operations.
- Team Support: Assist other cooks with recipes and tasks as needed, promoting a collaborative kitchen environment.
- Preparation: Prepare ingredients prior to cooking, including thawing, breading, or cutting as required.
- Quality Control: Comply with portion sizes, quality standards, department rules, policies, and procedures to maintain exceptional food quality.
- Inventory Management: Identify and select cuts of meat, poultry, shellfish, fish, and vegetables for production, ensuring optimal inventory levels.
- Plating: Plate items according to specifications, including garnishes, to present visually appealing dishes.
- Sanitation: Maintain a clean and sanitary work station, adhering to health and safety standards.
- Equipment Operation: Select and use knives, utensils, and equipment to portion, cut, slice, dip, batter, bread, whip, beat, maintain holding temperature, broil, boil, fry, sauté, and other tasks to produce food in the kitchen.
- Prep List Management: Assist in completing prep items and establishing a prep list in the absence of a senior cook.
- Soup Preparation: Prepare soups according to designated recipes, ensuring consistency and quality.
- Inventory Restocking: Ensure the line is stocked by each cook at the end of their shift or stocks the line when the kitchen is busy.
- Cooler Management: Assist in checking coolers at the end of the shift, ensuring compliance with Health Department Standards, including rotating, wrapping, and labeling products properly to prevent waste.
- Costing Recipes: Begin to learn costing recipes to prepare for advancement to a senior cook role.
- Additional Duties: Perform other duties as deemed necessary by a supervisor or manager.
The Cove Cook II role involves working in a fast-paced kitchen environment, with potential hazards including back strain, high noise levels, exposure to heat, and sore feet.
