Senior Executive Culinary Manager

Job Summary
The Senior Executive Culinary Manager will oversee the success of daily kitchen operations, ensuring a consistent high-quality product is produced while managing food-related functions. This role requires a strong culinary talent, exceptional leadership skills, and the ability to motivate staff to continually improve guest and associate satisfaction while maintaining the operating budget.
Responsibilities
- Manage and supervise all kitchen areas, including food preparation, presentation, and service.
- Lead and develop staff, including direct reports, to ensure they have the skills and knowledge needed to succeed in their roles.
- Ensure compliance with all food safety and sanitation standards, as well as local, state, and federal regulations.
- Collaborate with the Executive Chef to plan and implement menu items, specials, and promotions.
- Estimate daily production needs and communicate these to kitchen personnel.
- Maintain accurate records of food inventory, labor costs, and other key performance indicators.
- Develop and implement cost-control measures to optimize kitchen operations and reduce waste.
- Conduct regular kitchen tours to ensure high-quality food presentation and service standards.
- Develop and implement training programs to enhance the skills and knowledge of kitchen staff.
- Ensure that all kitchen equipment is properly maintained and in good working order.
- Participate in menu engineering and planning to optimize menu offerings and pricing.
- Develop and manage kitchen budgets and forecasts to ensure accurate financial planning and forecasting.
Requirements
- Bachelor's degree in Culinary Arts or a related field.
- Minimum 5 years of experience in a senior culinary management role.
- Proven track record of success in managing kitchen operations, including food safety, sanitation, and quality control.
- Excellent leadership and communication skills, with the ability to motivate and develop staff.
- Strong analytical and problem-solving skills, with the ability to interpret data and make informed decisions.
- Ability to work effectively in a fast-paced environment, managing multiple priorities and deadlines.
Benefits
Marriott International offers a competitive salary range of $37.50 to $49.52 per hour, as well as a comprehensive benefits package, including health insurance, 401(k) plan, employee stock purchase plan, and paid time off. Additionally, Marriott offers tuition assistance, adoption assistance, paid parental leave, and other life and work wellness benefits.
