Position Overview: As a Chef de Partie at The Alden, you will be responsible for managing a designated area within the kitchen. Your key responsibilities include:
- Overseeing a specific kitchen section (such as Garde Manger, Saucier, or Pâtissier) while collaborating effectively with fellow chefs.
- Crafting a variety of visually appealing and flavorful dishes that highlight diverse ingredients.
- Ensuring that all dishes are presented attractively and consistently.
- Coordinating the procurement of ingredients, supplies, and kitchen equipment.
- Maintaining compliance with health and safety standards in your kitchen section.
- Working alongside Chef Jared to innovate seasonal recipes and menus that reflect current culinary trends.
Key Responsibilities:
Uphold sanitation standards in accordance with Health Department regulations, ensuring cleanliness and organization in the kitchen. Provide training to staff on sanitation practices as needed.
Implement safe food handling procedures to create a secure work environment, enforcing proper techniques and safety guidelines.
Ensure high standards in ingredient quality, food preparation, and presentation.
Lead the team in efficient production, quality assurance, recipe consistency, and minimizing waste.
Exhibit culinary expertise by engaging in daily tasks, preparing essential menu items, and inspiring the team to maintain a strong work ethic and quality standards.
Manage labor and operational expenses through strategic planning, purchasing, and inventory oversight, with a focus on cost efficiency.
Conduct daily line checks and provide constructive feedback to the kitchen team.
Supervise the recruitment, training, mentoring, and evaluation of kitchen staff to ensure exceptional food quality and presentation.
Engage with guests to enhance their dining experience, fostering positive relationships and accommodating special requests when necessary.
Identify and report any maintenance needs within the kitchen.
Support fellow kitchen staff as required.
Participate in staff and management meetings as necessary.
Perform additional tasks as assigned by the Head Chef.
Promote a safe and professional work environment.
- Hourly employees are eligible for overtime pay for hours worked beyond 40 in a week at a rate of 1.5 times the hourly wage.
- Salaried employees are expected to work a minimum of 50 hours each week.
