Pacifica Hotels is seeking a highly skilled and experienced Executive Chef to join our Home Office team. As a key member of our culinary team, the successful candidate will be responsible for elevating the company's overall culinary performance.
Key Responsibilities- Aid in the recruitment and selection of culinary talent.
- Train and develop culinary team members across the company.
- Collaborate with the Corporate Director of Food and Beverage to develop, roll out, and update processes, procedures, and policies related to food safety, food cost, and kitchen operations.
- Assist in evaluating new and existing kitchen layouts, equipment, systems, and processes.
- Develop menus for new or existing operations.
- Develop order guides and costing sheets for new or existing operations.
- Work with property-level teams to optimize procurement and ensure accurate execution of food inventories.
- Participate in internal VIP tastings and menus, including ribbon cuttings, anniversaries, corporate retreats, and new openings.
- Drive talent development for the corporate culinary team by assisting in the oversight and development of culinary assets in the field.
- Provide information and assistance to employees, vendors, and business contacts on procurement, inventory management, and cost of goods.
- Review and provide oversight and feedback to culinary teams on local health inspections and Ecosure monthly audit results.
- Provide ongoing proactive and reactive property-level culinary training.
- Assist with additional projects, deployments, and implementation schedules as needed.
- Provide weekly progress updates.
- Participate with the Senior Management Team in the development, review, and distribution of Standards of Excellence for both corporate and property-level needs.
The successful candidate will have administrative office staff and general supervision and management of employees while functioning in onsite task-force assignments.
Working Conditions/EnvironmentThe Executive Chef will work in a hotel onsite environment, including the front and back of house, interior, and exterior of the hotels.
Qualifications- Any combination of education and experience equivalent to graduation from a college or combination of education, training, or experience that provides the knowledge, skills, and abilities required to perform this position's job duties.
- 5 years of experience as an Executive Chef, FB Manager, or Supervisor.
- Combined branded and independent hotel experience preferred.
- Full-service hotel experience.
- Experience in hotel openings and acquisitions preferred.
- Demonstrated proficiency and accuracy in using MS Office products such as Word, Excel, and Outlook.
- Professionalism and confidentiality are essential, with a strong commitment to providing outstanding customer service.
- Considerable knowledge of business English, spelling, and punctuation, office practices, and procedures.
- Ability to consistently display courtesy, etiquette, and enthusiasm on the phone and in-person.
- Strong organizational skills with the ability to maintain comprehensive and cohesive records.
- Must possess the ability to work under pressure and meet deadlines.
- Ability to write and communicate in a professional manner.
- Ability to adjust schedule and be present during the changing business needs.
- Ability to travel on business and assignment.
