Job Summary

This Executive Chef position plays a key role in the food service operation at our facility, preparing large quantities of a variety of food including meats, fish, poultry, gravies, cereals, soups, vegetables and other foods.

Responsibilities

  • Cook food as directed in the operational menu plan, ensuring recipes are extended to meet facility population requirements and maintaining accurate production records.
  • Direct and inspect the work performed by detainee food service staff, providing training and guidance as needed.
  • Conduct orientation and training programs for staff employees and assist with preparation scheduling and quality assurance of all foods and supplies.
  • Place orders for food and supplies as assigned by management, checking in deliveries and taking inventory as required.
  • Ensure the sanitation and safety program is actively practiced in all areas of the department.
  • Assist management in maintaining high-level client relations and perform other duties as assigned.

Requirements

  • A minimum of one (1) year prior experience in food preparation obtained in commercial, military or institutional setting is required.
  • Relevant technical training courses in food service preparation and cooking are preferred, as well as prior cooking and correctional food service training.
