Job Overview
At Great Wolf Resorts, the Culinary Operations Supervisor thrives in a dynamic and stimulating environment, dedicated to upholding our promise of exceptional hospitality. This role is pivotal in managing kitchen operations in the absence of the Executive Chef, overseeing food preparation and inventory management, and assisting with staff scheduling and training.
Key Responsibilities
- Support the Chef in directing the preparation and presentation of all culinary offerings across the Lodge.
- Adhere to and enforce all local Health Department food preparation codes and regulations.
- Collaborate with the Chef to recruit, train, supervise, and schedule culinary staff, ensuring adherence to productivity standards and cost controls.
- Foster a collaborative working relationship with all hotel personnel to ensure efficient operations and exceptional guest service.
- Contribute to the development of innovative menus and individual dishes that reflect current culinary trends and align with revenue goals.
- Assist in auditing food storage areas to maintain quality and compliance with FIFO (first in, first out) practices and health regulations.
- Execute food preparation tasks for a variety of ingredients used in recipes.
- Prepare all menu items according to established recipes, adjusting flavors as necessary with the Chef's guidance.
- Ensure that the back-of-house area meets the highest standards of cleanliness and presentation.
- Maintain adequate supplies of dishes and utensils, ensuring all cooking and serving items are clean and sanitary.
- Monitor supply levels in the kitchen and replenish as needed.
- Oversee equipment functionality, perform preventative maintenance, troubleshoot issues, and arrange for repairs when necessary.
- Ensure compliance with all food-handling and sanitation regulations.
Basic Qualifications & Skills
- High School diploma or equivalent.
- Minimum of 3 years of experience in restaurant kitchens.
- Flexibility in scheduling based on business needs, including nights, weekends, and holidays.
- Successful completion of a criminal background check and drug screening.
Desired Qualifications & Traits
- Culinary education degree.
- 1+ years of experience in a supervisory or leadership role within a restaurant setting.
- Experience with hands-on equipment maintenance.
- Prior kitchen experience in the hotel or resort industry.
- Understanding of sanitation practices and knowledge of necessary precautions for a clean food preparation environment.
- Demonstrated teamwork and collaboration skills.
- Professional demeanor that inspires trust and confidence.
- Enthusiastic and positive attitude.
Physical Requirements
