Job Description

Aloft Chesapeake is in search of dedicated individuals with a strong background in restaurant operations. We currently have an opening for a Culinary Specialist.

The Culinary Specialist will be responsible for maintaining high standards of food quality, presentation, and cost management in accordance with established recipes.

  • Food preparation will involve the use of various kitchen equipment to measure and mix ingredients, as well as washing, peeling, cutting, and shredding fruits and vegetables, and preparing meat, poultry, and fish.
  • Monitor food waste and usage in line with operational guidelines, and assist in implementing strategies to address any food cost issues.
  • Check inventory levels for shift requirements; determine necessary preparations, freezer pulls, and line setups. Identify any out-of-stock items or potential shortages.
  • Begin preparation of food items in advance for meetings, events, or employee functions, ensuring minimal over-preparation.
  • Support the preparation, production, and service of special events.
  • Perform daily oil filtration in deep fryers.
  • Assist with food storage upon delivery, ensuring all food containers are dated and rotated as necessary.
  • In collaboration with the Dining Room Attendant, ensure the cleanliness of the entire area and secure storage cabinets.
  • Be capable of setting up, operating, cleaning, and sanitizing all kitchen equipment safely.
  • Regularly assess the condition of the work area and equipment, informing management of any issues that require attention.
  • Adhere to sanitation standards consistently, practicing proper handwashing techniques frequently.
  • Maintain a high awareness of cross-contamination risks and implement measures to prevent it.
  • Follow safety protocols at all times.
  • Perform additional duties as assigned by the supervisor.

To excel in this role, candidates must successfully fulfill each essential duty. The following qualifications are essential:

  • Flexibility to work both morning and evening shifts.
  • Comprehensive knowledge of emergency procedures.
  • Strong verbal and written communication skills.
  • Attention to detail.
  • Ability to thrive in a high-pressure environment.
  • Familiarity with food and beverage products.
  • A minimum of one year of experience in a culinary role.
  • Availability to work weekends and holidays.
