MVI is seeking a dedicated Galley Manager to assume a pivotal role aboard the INDEPENDENCE, serving as a key point of interaction for both crew and clients. This position carries significant responsibilities, including the oversight of provisions procurement, menu planning, galley operations, mess deck management, dry stores, and sanitation, alongside the preparation and serving of all meals.
Direct Supervisor: Chief Mate and/or Captain for all tasks performed.
JOB STATUS: Non-Exempt, Full-time rotation position of 30 days on and 30 days off
SECURITY CLEARANCE: Must possess or obtain a Top Secret clearance.
ESSENTIAL QUALIFICATIONS: USCG food handler endorsement.
EXPERIENCE REQUIREMENTS: Must have a solid understanding of ship operations.
EDUCATION: High School Diploma or equivalent.
- Minimum of 4 years' experience in at-sea food preparation and planning.
- Basic knowledge of seamanship, operation of ship's winches and cranes, as well as loading procedures and ship safety protocols.
- Must hold an MMD with a food handlers' endorsement.
CERTIFICATIONS AND TOOLS:
- EXPERIENCE LEVEL: Requires a minimum of 4 years' experience in at-sea food preparation and planning.
- U.S. Merchant Mariner's Credential (MMC)
- Standards of Training, Certification and Watchkeeping for Seafarers (STCW)
- Transportation Worker Identification Credential (TWIC)
ADDITIONAL QUALIFICATIONS / SKILLS:
KEY RESPONSIBILITIES:
The Galley Manager will coordinate the following functions:
Functionally, the successful candidate will:
- Develop menus, create purchase requisitions, and upon approval, order provisions and supplies. This includes maintaining documentation of expenditures, tracking meals served, comparing vendors and prices, and managing provision budgets. Menus should be balanced and displayed at least one day in advance in the mess deck.
- Ensure proper stowage of all food and non-food items. This duty includes monitoring all refrigeration units for correct temperatures, securing provisions to prevent shifting during transit, pest control, and managing interior space temperature.
- Prepare and serve meals to all crew and clients, ensuring three balanced meals with dessert at dinner.
- Maintain cleanliness in the Galley, Dry Stores, and Mess Deck areas. Responsibilities include sweeping, mopping, and cleaning all fixtures, bulkheads, tables, chairs, decks, countertops, coffee and soda areas, cabinets, shelving, refrigerators, walk-ins, and galley equipment.
- Restock condiments, napkins, cups, utensils, ice in soda machines, and all consumables in the mess deck area.
- Perform preventative maintenance and cleaning tasks as directed by the Chief Mate.
- Maintain a disposal log.
- Remove trash from the mess deck, lounge, galley, and dry stores.
- Sanitize the 01-deck trash dumpster and manage trash disposal in port, including ash from the BBQ, cardboard from dry stores, and food waste.
- Execute other duties as assigned, including but not limited to, in-port watches, assisting with mooring, unmooring, deck operations, and small boat recovery.
- Consult with the Master regarding menus and budget-related matters.
- Prepare menus for approval by the Cook/Steward and the Master.
- Ensure mealtimes are approved by the Master, typically lasting one hour.
