SUMMARY:
The Cottage Culinary Specialist is responsible for preparing high-quality meals for residents, staff, and visitors at St. John's United. This role involves cooking, seasoning, and baking a diverse range of dishes, including meats, vegetables, soups, and breakfast items, while adhering to various dietary restrictions and menu plans.
KEY RESPONSIBILITIES:
- Food Preparation: Gather ingredients and supplies from storage as needed for daily meal preparation.
- Analyze production schedules and menus to determine food requirements, including the variety and quantity needed.
- Season and prepare a wide range of foods in accordance with established menus.
- Measure, weigh, and combine ingredients for large-scale food preparation.
- Utilize various cooking methods to prepare meats and vegetables.
- Conduct quality tests on prepared foods.
- Ensure proper storage, labeling, and dating of food items.
- Prepare and bake simple baked goods.
- Assist in meal preparation for special events and holidays.
- Prepare meals in compliance with specific dietary requirements.
- Maintain cleanliness in the kitchen, dining, and common areas.
Kitchen Sanitation and Safety:
- Keep work areas, utensils, and equipment clean and organized.
- Adhere to sanitation and safety protocols in line with Serv Safe standards.
- Obtain Serv Safe Certification within the first six months of employment.
- Practice safe handling of knives and kitchen equipment.
- Complete daily and weekly cleaning tasks as assigned.
- Conduct deep cleaning of kitchen and dining areas at least twice a month.
- Dispose of spoiled or outdated food items responsibly.
- Protect food and equipment from contamination and spoilage.
- Maintain accurate production records and food temperature logs.
- Address day-to-day issues related to equipment and food supplies.
Resident Care Responsibilities:
- Assist residents in reaching the dining area as needed.
- Provide feeding assistance when required.
Safety and Compliance:
- Follow all safety regulations established by St. John's United.
- Identify and report safety hazards promptly.
- Participate in mandatory safety training sessions.
- Utilize proper body mechanics when handling supplies.
Customer Service and Mission:
- Support the principles of the Eden Alternative philosophy, fostering a nurturing environment.
- Adhere to St. John's Guidelines for Customer Service.
- Engage with residents and visitors warmly and professionally.
Employee Responsibilities:
- Comply with annual TB testing and influenza vaccination policies.
- Attend all required training sessions.
- Meet all certification and training obligations.
- Perform additional duties as assigned by supervisors.
QUALIFICATIONS:
Preferred: High School diploma or GED. Previous experience in a kitchen, restaurant, or food service environment is essential. Certification in St. John's feeding program and transfer training is required within the first three months of employment.
SKILLS AND ABILITIES:
- Ability to operate kitchen equipment safely and effectively.
- Understanding of dietary requirements, recipes, and menus.
- Effective communication skills, both written and verbal.
- Capability to work independently and collaboratively.
- Physical ability to lift and manage heavy items.
- Proficiency in preparing and cooking a variety of foods.
- Knowledge of food preparation techniques and quality standards.
- Strong organizational and time management skills.
- Understanding of safety policies and procedures.
- Basic arithmetic skills for recipe adjustments.
PHYSICAL DEMANDS:
- Moderate physical activity is required, including lifting up to 25 pounds regularly and up to 50 pounds occasionally.
- Standing, walking, and bending for extended periods are necessary.
WORKING CONDITIONS:
- Exposure to varying temperatures, odors, and noise levels is expected.
- Minimal exposure to hazards, requiring adherence to safety precautions.
- Normal food service and healthcare environment.
- Interaction with plants and animals may occur within the workplace.
